Truly sugar-free orange muffins, I want to emphasize “truly” because nowadays you can find many recipes online that replace sugar with erythritol or similar. I won’t tell you what I think about sweeteners, but I’ll leave you a link to this interesting study published in 2023.
I’m offering a winter version, since I use oranges, of one of my most successful recipes to this day, even though I wrote it in 2017.

Ingredients
- 2 oranges (peeled, weighed about 500 g (about 1.1 lbs).)
- 3.5 tbsp extra virgin olive oil (or seed oil)
- 1.6 cups all-purpose flour
- 3 eggs
- 1 packet baking powder
- to taste ground cinnamon (optional)
Tools
- 1 Muffin Tin
- 1 Food Chopper
Steps
Peel and cut two large oranges into large pieces.
Place the orange pieces in the blender and add the oil.
Blend everything very well.
Add the three whole eggs to the blender, blend.
Transfer everything to a bowl and add the sifted flour, to which you have added the baking powder, and mix slowly.
Add the cinnamon to the batter.
To incorporate more air and make the muffins soft and fluffy, I used an electric whisk.
Fill the tin, I use a silicone mold, which allows me to achieve perfect results.
Bake at 375°F in the oven for about 15 minutes, always do the toothpick test to check for doneness.

FAQ (Questions and Answers)
How to store the muffins?
I freeze them by placing them in special bags, you can store them for about two months.
Is it really possible for two oranges to completely replace the sugar?
For me, there’s no need to add sugar, but if you’ve never had a sugar-free cake, start by adding three tablespoons of sugar (about 1.8 oz) and then reduce until you find the perfect recipe for you. You can also replace the sugar with chocolate chips.
How do I substitute the flour to make gluten-free muffins?
Use rice flour.
