Vegan gluten-free vegetable rolls, not the usual recipe, a light main dish that even children enjoy and is for everyone, vegetarians, vegans, and those intolerant to gluten.
A main dish born by chance, one day when I forgot the groceries in the office fridge 🙂 and after discovering that in the fridge I only had a few chard leaves.
Desperate, not wanting to go back to the supermarket, I searched the pantry and found a package of rice paper sheets.

Ingredients
- 6 red onions
- 20 baby chard leaves
- 8 rice paper sheets
- to taste extra virgin olive oil
- to taste salt

Steps
Wash and slice the onions thinly.
Wash and roughly chop the baby chard leaves.
In a pan, sauté the onions with a bit of water, add salt, and cook slowly for about 30 minutes.
Add the chard and cook for a few more minutes.
Meanwhile, place some warm water in a plate and soak the rice paper for about 30 seconds.
When the rice paper sheets are softened, add the filling.
Form the rolls by folding over the first long side.
Fold over the other side as well.
Finally, fold over the two short sides.
Once the rolls are formed, cook them.
In a pan, add some oil, heat it, and cook for a few minutes on both sides.
The rolls can be eaten as they are, without any dipping sauce.
If you wish, they can be served with soy sauce.
