I discovered warm hummus during a trip to Göreme, in the heart of Cappadocia, and I fell in love at the first taste. In that area of Turkey, it is served warm, with melted butter and nuts, often as an appetizer or sharing dish.
Compared to the classic version, enjoying it warm enhances the flavor of chickpeas and tahini, making it even more intense and enveloping. The toasted walnuts add a crunchy note that is not usually found in traditional hummus, making this cream even more complete and interesting, even from a nutritional point of view.
A simple and quick preparation, perfect for bringing a healthy, flavorful dish inspired by authentic Middle Eastern cuisine to the table.

Steps

The preparation of warm hummus with walnuts is very quick.
Place the chickpeas, lemon juice, tahini, garlic, and cumin in the mixer, then blend until smooth and homogeneous. If necessary, add a little water to soften the consistency.
Transfer the mixture into an oven-safe or air fryer-safe dish or container.
Meanwhile, briefly toast the walnuts in a non-stick pan, then add the butter and let it melt while stirring. Pour everything into the chickpea cream and mix well.
Traditional Oven Cooking:
Preheat the oven to 350°F and bake for 5–10 minutes until the hummus is warm and slightly golden on the surface.
Air Fryer Cooking:
Place the dish in the basket and cook at 320°F for about 5–7 minutes. Check that the surface is well heated and starts to become slightly golden.
Serve immediately, spreading the hummus on slices of toasted bread or accompanying it with raw vegetables.
