My winter salad is made with variegated Castelfranco radicchio, which I choose because my family doesn’t like strong flavors, and this vegetable is sweet and very delicate.
With oranges that are an important source of vitamins, particularly vitamin C, A, B1, B2, and therefore, in winter, are always a great choice to protect our health.

The cherry on top of this recipe is a fabulous mango sauce, truly delicious, which you can also use to accompany meat and fish, it goes very well with shrimp or salmon.

Ingredients
- 7 oz fresh baby lettuce
- 3.5 oz variegated Castelfranco radicchio
- 1 oranges
- 1/2 apple
- 1.75 oz feta (I used homemade vegan feta)
- 1/2 lime juice (to drizzle over the apple slices)
- to taste extra virgin olive oil
- 1 mango
- 1/2 lime juice
- 2 tsp honey
- 2 tbsps Dijon mustard
- to taste salt
- to taste paprika

Necessary to present the winter salad with mango sauce:

Steps
In the bowl, make a bed of baby lettuce.
Add the variegated Castelfranco radicchio to one-third of the bowl.
Slice an orange and arrange the slices to occupy two-thirds of the bowl.
Wash an apple, slice it into wedges, use half the juice of a lime to drizzle over the apple slices to prevent oxidation.
Finally, add the vegan feta (or the original Greek feta) cut into pieces.
Your winter salad will be ready after dressing it with a drizzle of extra virgin olive oil.
Remove the skin from the fruit and cut it into pieces.
Place the mango pieces in a tall container, also adding mustard, honey, lime juice, and salt.
Blend everything with an immersion blender.
When all the ingredients are combined, transfer it to a small bowl and add the paprika, at this point the mango sauce will be ready.
I ate it with crackers, as a side to the salad.
But you can toast a slice of bread and spread it with this sauce.
Storage
You can store the salad bowls in the fridge for up to one day, covered with plastic wrap.
