This air fryer chicken breast is really tasty and fast to prepare. Chicken breast is a white and light meat and is also economical. The chicken breast lends itself to many preparations: breaded, stuffed, grilled, pizzaiola style. With this recipe, I wanted to prepare the chicken breast in an air fryer in an original way, enriching it with simple ingredients that, at the same time, give a little more flavor without overpowering and covering the delicate taste of the meat.
To prepare this dish, I used seasoned, pitted Leccine olives, but Taggiasca olives, always pitted, ripe Piccadilly tomatoes, and sun-dried tomatoes in oil are also great. Everything is placed raw in the pan to obtain a succulent and tender meat dish. The fresh tomato, sun-dried tomatoes, and olives make it truly delicious… I’m sure you’ll love it.

Ingredients
Ingredients for 4 servings of Chicken Breast
- 1.4 lbs chicken breast (sliced)
- 7 oz Piccadilly tomato
- 1.75 oz sun-dried tomatoes in oil
- 2.8 oz pitted olives
- 2 tablespoons tomato pulp
- salt and pepper
- as needed extra virgin olive oil
- 1 clove garlic

- 1 Air fryer
Steps
Start by greasing the pan where you will cook the chicken with a little extra virgin olive oil. If the slices are very thick, flatten them with a meat tenderizer and place them at the bottom of the pan.
Wash and dry the Piccadilly tomato and cut it into chunks
Move on to the sun-dried tomatoes
Cut them into chunks as you did with the Piccadilly
At this point, add the Piccadilly tomatoes, sun-dried tomatoes, olives to the chicken, the two tablespoons of tomato pulp or sauce, the garlic clove, salt, and pepper. Mix and drizzle with a little extra virgin olive oil
Place the pan in the air fryer and cook at 356°F for 18 minutes, stirring a couple of times. Raise to 392°F and continue for 2 minutes
The chicken breast is ready… Enjoy your meal!!
You can substitute the Piccadilly tomato with Cherry or, better yet, with Datterino. You can replace the olives with the ones you prefer, I recommend always using pitted olives.
