Air Fryer Multigrain and Greek Yogurt Mini Pizzas

Today I’m presenting these amazing Air Fryer Multigrain and Greek Yogurt Mini Pizzas, prepared in an air fryer without leavening, and ready in 10 minutes.

You can bake these Multigrain and Greek Yogurt Mini Pizzas in either the air fryer or a traditional oven, making them perfect for a savory snack or a buffet: ideal for when you have little time available. Light and delicious, perfect for those on a diet who want to indulge without giving up flavor.

I’ve already shown you, with the Air Fryer Focaccia recipe, that you can bake pizzas and focaccias in an air fryer with great results: soft and fluffy, a real delight for the palate. Also ideal as a base for other preparations.

Ingredients

  • 140 flour (multigrain with seeds)
  • 140 g all-purpose flour
  • 280 g Greek yogurt 0% fat (plain)
  • 2 teaspoons salt (coffee spoons)
  • 1 packet instant yeast for savory preparations (13 g)
  • 15 g water
  • as needed extra virgin olive oil (to grease the tray)
  • 200 g tomato sauce
  • 200 g mozzarella (diced)
  • 1 pinch salt
  • as needed dried oregano

Steps

  • Pour the flours into a bowl along with the salt and instant yeast, and prepare the Greek yogurt you will use in another bowl. Keep the water close by, as you will add it later

  • Mix with a spoon and add the Greek yogurt, continuing to stir initially with a spoon

  • Continue kneading with your hands

  • Add water little by little, continuing to knead. You should obtain a soft and slightly sticky dough; if needed, add more water than indicated, always a little at a time, until you reach the correct consistency

  • Flour the parchment paper and roll out the dough between two sheets to about 1/4 inch thick. Cut it with the cookie cutter or a glass. Re-knead the scraps and cut again to make more mini pizzas

  • Grease your hands with a bit of oil and transfer the mini pizzas to a tray you’ve previously greased with some oil. Place them spaced apart. In a bowl, mix the tomato sauce with salt, oregano, and a drizzle of extra virgin olive oil and distribute it on top of the mini pizzas

  • Transfer the tray to the air fryer and cook at 392°F (200°C) for 8 minutes

  • Remove the tray, the mini pizzas should already be golden on top and bottom

  • Add the diced mozzarella and continue cooking at 392°F (200°C) for 3 minutes or until the mozzarella has melted

  • Here are the mini pizzas ready. Repeat the same procedure for the next batch. Since the air fryer is already hot, the second batch might take a few minutes less than the first, adjust accordingly

  • Here are the mini pizzas ready to be served: melty and crunchy on the outside, soft and fluffy on the inside. You can prepare them in advance and heat them again in the air fryer for a few minutes before serving, but they are also delicious warm!!

If you are intolerant, you can replace the Greek yogurt with a lactose-free one

Tips for Preparing Multigrain and Greek Yogurt Mini Pizzas

During the preparation of the mini pizzas, add the water a little at a time to achieve the right consistency and keep a glass handy, compared to what I indicated, the consistency of the dough depends greatly on the Greek yogurt you will use, which can be more liquid or thicker.
