This cheesy potato casserole in the air fryer is super tasty. I didn’t know what to make for dinner and I had some potatoes and just 1 egg… too little to make a potato omelet which I love so much, then I opened the fridge and found some slices of cooked ham and some crescenza cheese… and that’s how I ended up with this potato casserole. I cooked the potatoes as if I were preparing the classic omelet and combined them with what I had available… really excellent result!

- 1.32 lbs potatoes
- 2 tablespoons extra virgin olive oil

- 1/3 cup grated Parmesan cheese
- 5.3 oz crescenza cheese

How to prepare the potato casserole in the air fryer
After washing and peeling the potatoes, rinse them, dry them, and season them in a bowl with 2 tablespoons of EVO oil and pepper; add the salt only at the end of cooking.
Transfer them to the grill of your air fryer and cook at 392°F for 20 minutes, shaking the basket occasionally to ensure even cooking.
Once ready, add some salt and let them cool slightly.
While waiting for the potatoes to cool, mix in a bowl the crescenza, egg, Parmesan, string cheese cut into cubes and the cooked ham cut into pieces, and add the now-cooled potatoes.
Transfer the mixture into the baking pan and place it on the grill of your air fryer or on the shelf if you have an oven-type air fryer.
Cook the casserole at 356°F for 15 minutes or until a golden crust forms on the surface.

Tips for storing the potato casserole
The Air Fryer Potato Casserole can be stored in the refrigerator for a couple of days, covered with plastic wrap or in an airtight container. You can replace the cheese with what you have in the fridge or with the one you prefer.
