The version I propose is a light version because the potato croquettes are cooked in an air fryer, but without losing the crunchiness that characterizes this delicacy. Air fryer potato croquettes are very easy to make, the difficulty is in not letting them open during cooking, but here too the air fryer will make everything much simpler.
The potato croquette recipe I propose can still be cooked in a pan with oil… the choice is yours.

Ingredients
- 1.1 lbs potatoes
- 2 egg (one for the coating)
- 1/3 cup pecorino cheese (grated)
- 1/3 grated parmesan cheese
- to taste salt and pepper
- to taste flour
- to taste breadcrumbs
- A few sprays oil

Steps
First, boil the potatoes or steam them, and as soon as they are ready, mash them with a fork or a potato masher. Let them cool and, in the bowl where you have transferred the mashed potatoes, add the egg, cheeses, salt, and pepper and mix well, cover with plastic wrap and refrigerate for at least 4 hours
I shaped them into the classic slightly elongated shape and passed them first in the flour

Finally in the breadcrumbs
I arranged them in the tray of my oven-style air fryer and gave a few sprays of oil; if you have the basket type, place them directly on the grid
Cook at 450°F for 6 minutes and then I lowered to 400°F for 2 minutes. You can start directly at 400°F and extend the time a little, in any case until the surface is golden. If necessary, turn them for even cooking; I did not turn them
