Air Fryer Potato Focaccia

Today I present to you an original dish that will win everyone over: the potato focaccia cooked in the air fryer. A recipe that will make you look great: perfect as an appetizer, delicious as an aperitif, or even as a second course. A savory pie without leavening, simple and tasty that you can pair with a mix of cold cuts.

It is a dough that includes water, extra virgin olive oil, flour, salt, pepper, Grana Padano, grated potatoes, rosemary, and if you want, you can add a little chili pepper as I did. Mix everything in a bowl and immediately put it in the air fryer to cook. To get a well-cooked potato focaccia inside and an even and crispy cooking on both sides, the focaccia must be flipped towards the end of cooking. I did not use parchment paper in the pan, but if you want to make this operation easier, you can do it, increasing the cooking times compared to what I indicate in this recipe.

Ingredients

  • 14 oz potatoes (about 3 medium potatoes)
  • 2 tbsp extra virgin olive oil
  • 1.5 cups water
  • 1.75 cups flour
  • to taste salt and pepper
  • A few to taste rosemary (fresh)
  • 1 dried red chili pepper (optional)
  • 1 oz grated Grana Padano
  • A few sprays extra virgin olive oil

  • 1 Baking Pan 12×12 inches
  • 1 Air Fryer
  • 1 Hand Whisk

Steps

  • Pour the olive oil, water, salt, pepper, and chili (optional) into a bowl and mix

  • Add the flour a little at a time, continuing to mix with a whisk

  • Incorporate the grated Grana

  • Mix until you get a smooth batter without lumps

  • After washing and peeling the potatoes, grate them with the large-hole grater and add them to the batter. Mix well

  • Grease the baking pan and pour the mixture, leveling it well. Sprinkle the surface with fresh rosemary, dust with some Grana, and spray a little oil on top

  • Insert the pan into the air fryer and cook at 320°F for 15 minutes, increase to 350°F and continue for another 10 minutes

  • Remove the pan and flip the focaccia over using parchment paper

  • Return the pan to the air fryer and cook at 400°F for 12 minutes

  • Take it out and cut it into slices

  • Serve and enjoy the hot and crispy potato focaccia

Tips for Air Fryer Potato Focaccia

If you have a smaller air fryer, you can halve the ingredients, or cook it in two rounds, dividing the dough into 2 pans, because the layer must be thin to be crispy. If you decide on the double cooking, adjust the timing for each focaccia

Storing Potato Focaccia

You can store the focaccia at room temperature and reheat it in the air fryer for a few minutes
