Delicious and very easy to prepare, the Air Fryer Smashed Potato Tray, cooked in an Air Fryer! It will become one of those dishes that you won’t abandon once you’ve tried it because, besides its goodness, it doesn’t require particular culinary skills or special tools, just a glass to smash them directly in the baking dish you’ll use for cooking. The ingredients used are also simple: grated Parmesan or Grana Padano, extra virgin olive oil, and spices… and yes, you got it right; you won’t need anything else! The smashed potato tray is gluten-free, making it suitable for those with intolerance to this protein.
What makes this Smashed Potato Tray recipe cooked in an Air Fryer particularly tasty, but that can also be baked in the oven, is the use of potatoes with the skin on, just make sure to remove any soil residue by scrubbing with a brush under running water, giving a more rustic flavor to the dish.

- 5 potatoes (about 28 oz)
- 1 cup grated Parmesan (or Grana Padano)
- 3 tbsp extra virgin olive oil (plus extra for greasing the pan and drizzling the potato surface)
- 1 dried red chili
- to taste salt
- to taste pepper
- to taste chives
- to taste marjoram
- to taste oregano

Steps
First, wash the potatoes thoroughly under running water, scrub the skin with a brush to remove soil residue, I also soak them with baking soda and rinse them well. Place the potatoes in the combi tray with 1 and 1/2 liters of water
Insert the tray into the Combi, switch to Combi Cooker mode, select the Steam program, and start cooking for 20/22 minutes. At the end of cooking, check with a toothpick or a fork if you can pierce the pulp easily; the potatoes are ready, otherwise continue cooking. Drain them and let them cool a little. Alternatively, for those who don’t have the Ninja Combi 12 in 1, which is also a multicooker, so you can steam, boil the potatoes in a pot completely covering them with water or cook them with a steamer, decide based on your habits or what’s more convenient for you. To check if they’re well cooked, use a toothpick or fork; if you can pierce the pulp easily, the potatoes are ready, otherwise, continue cooking. Once ready, drain and let them cool a bit
Meanwhile, brush the surface of the tray with olive oil
Cover the base with some of the grated Parmesan
Start smashing one potato at a time with the bottom of the glass, covering the entire tray
Prepare the olive oil emulsion with a mix of spices: chives, marjoram, oregano, salt, pepper, and a dried chili that I crumbled. You can replace or add others that you prefer
Brush the entire surface of the smashed potatoes with the oil and spices, add another pinch of salt on top
Sprinkle with the remaining Parmesan and drizzle with olive oil
Place the tray in the air fryer and cook at 392°F for 20 minutes using the bake or air fry program
After the first cooking, grill for 4 minutes at 464°F, moving the tray to the highest level
If your air fryer doesn’t have this function, continue cooking at 392°F for another 7/8 minutes or until a nice golden crust forms
Here is your smashed potato tray, cut it and serve it… mhmh, how good!

Oven Cooking for Smashed Potato Tray
Preheat the oven to 392°F and bake for about 35 minutes, placing the tray in the lower part of the oven. Finish cooking by turning on the grill for a few minutes, moving the tray to the top of the oven
Variations for Smashed Potato Tray
If your air fryer is smaller than mine, you can use a tray suitable for the size of your basket, reducing the amount of potatoes
