Steps

  • Start with the zucchini: wash, dry, and trim both ends. Grate them into a bowl with a large-hole grater

  • In another bowl, combine the eggs, salt, pepper, and grated Parmesan

  • Mix the ingredients well with a whisk or a fork

  • Squeeze the zucchini well to remove as much liquid as possible and add them to the egg mixture

  • Take a sheet of parchment paper, wet it under the faucet, squeeze it, and place it inside the pan you will use to cook the omelette. Pour and level the mixture well

  • Place the pan in the air fryer and cook on the bake program at 356°F for 15 minutes. My air fryer preheats for a couple of minutes on the bake program.

  • While the omelette is cooking, you can prepare the filling. In a bowl, combine the cream cheese, in this case, Philadelphia, the tuna, grated Parmesan, chives, salt, and pepper, and mix well. Store it in the refrigerator covered with plastic wrap

  • Once your omelette is ready, remove it from the pan and let it cool, covering it with another sheet of parchment paper

  • Place a piece of plastic wrap on a work surface and lay the cooled omelette on top. The plastic wrap will help you roll the omelette and maintain its rolled shape

  • Spread the cheese mixture leaving about 0.4 inches of the edges free

  • Add the slices of cooked ham

  • Fold the long side inward and roll the omelette. Close it by gently squeezing and making sure the plastic wrap adheres well

  • Now place it in the refrigerator to cool for at least 1 or 2 hours

  • After the resting time, remove the plastic wrap and slice it

  • Your zucchini omelette roll is ready to be enjoyed!
