You know the classic soft, simple, comforting apple cake? Forget it for a moment… the Apple, Cocoa, and Amaretti Cake, baked in an Air Fryer, is the unexpected apple cake: the bitter cocoa makes it intense, the amaretti add an aromatic touch, and the delicious apple puree gives it that soft and “melting” texture that surprises anyone who tries it.

I got the idea from a recipe I saw on social media that didn’t include apples in the batter. I was looking for a cake that my husband would like: you won’t believe it, but he hates apple cakes! How that is possible, I do not know! The only thing I know is that I never managed to get him to eat one😒, not even the apple and walnut one (which I recommend you try as soon as you get the chance). But with this cake, I hit the mark! You can’t imagine my satisfaction when I revealed to him that the main ingredient was apple… indeed 4 😂

Ingredients

Ingredients for a 20 cm (8 inches) pan

  • 4 apples (500 g peeled)
  • 1 egg
  • 100 g amaretti
  • 100 g sugar
  • 120 g bitter cocoa powder
  • 50 g butter
  • 1 pinch salt
  • to taste powdered sugar

  • 1 Non-stick Pan 20 cm (8 inches)
  • 1 Immersion Blender

Steps

Preparation of the Apple, Cocoa, and Amaretti Cake in Air Fryer

  • In a pan, melt the butter, add the sugar and the diced apples, previously peeled and cleaned. Cook them over medium heat until they are soft

  • Let them cool slightly and blend them with an immersion blender until a homogeneous puree is obtained. Set it aside and let it cool for a few more minutes

  • In another bowl, pour the sifted cocoa, add the egg, and mix

  • Add the puree and mix again until a smooth mixture is obtained

  • Crumble the amaretti with your hands

  • Add a pinch of salt, mix the mixture well

  • Grease the 20 cm (8 inches) pan and pour the cake mixture, leveling the surface well. Meanwhile, preheat the air fryer for 2/3 minutes

  • Insert the pan on the grid and proceed with the bake or air fry program at 160°C (320°F) for 35 minutes.

  • When the edge comes away from the sides of the pan, the cake is ready. It should be moist inside; let it cool completely before removing it from the pan

  • Dust with powdered sugar or cocoa, cut into slices, and serve. It’s even better the next day: the texture becomes fuller and more enveloping.
