Bread Muffins in Air Fryer

Do you ever have leftover bread? I do, quite often… and what better way to recycle it and breathe new life into something that might otherwise just become breadcrumbs?? Here are Bread Muffins in the air fryer: the bread is soaked in milk and left to rest for a few minutes before adding the rest of the ingredients to make them tasty, you can put whatever you have in the fridge, bits of cheese, cured meats, olives, you name it. My bread muffins in the air fryer are made with cooked ham, grated Grana and Pecorino, and diced string cheese.

Ingredients

  • 8.5 oz stale bread
  • 1 1/2 cup milk
  • 1 egg
  • 0.5 oz Pecorino Romano (grated)
  • 0.7 oz Grated Grana Padano
  • 4 slices cooked ham
  • Half package instant yeast for savory preparations
  • salt and pepper
  • to taste sesame seeds
  • to taste poppy seeds

Tools

  • 1 Air Fryer
  • 1 Hand Blender
  • 9 Muffin Cups in aluminum or silicone

Steps

  • Take a bowl and tear the bread into small pieces as much as possible. Add all the milk and let it sit for 10 minutes. The bread should absorb all the milk. After the resting time, mix well with your hands

  • Now add the egg, Pecorino, Grana, salt, and pepper

  • Blend the mixture with the hand blender

  • Add the yeast, diced cheese, and shredded cooked ham to the mixture

  • Mix the mixture well

  • Lightly grease the muffin cups, even if you’re using silicone ones, I used both, and sprinkle them with breadcrumbs

  • Fill the muffin cups with the bread mixture and sprinkle them with poppy and sesame seeds. Place them on the grill of the drawer fryer or on the tray if you have an oven fryer. Bake at 320°F (160°C) for 25 minutes

  • The muffins are ready to be enjoyed
