With this recipe for Breaded Artichokes in an Air Fryer, you enhance the authentic taste of the artichoke, keeping it tender inside and super crispy on the outside.
No boiling, no heavy frying: just simple ingredients and the magic of the fry that makes everything golden and light. All with very little oil and a really easy preparation: the fry, as we know, works miracles, the breading stays compact and golden, just like traditional frying.
As I mentioned, they are prepared raw, without pre-cooking, the breading adheres perfectly and remains golden. Ingredients for 3 artichokes
- 3 artichokes
- as needed breadcrumbs
- as needed grated Parmesan cheese (or Grana Padano)
- 1 bunch chopped parsley
- 2 eggs
- as needed salt and pepper
- A few sprays extra virgin olive oil

Steps
Preparation of Breaded Artichokes
Take the artichokes and clean them
Remove the outer leaves and the hard part of the stem
With the knife, clean the stem by removing the hard part
Cut the tips and divide the artichoke into wedges, not too thin or too thick, and remove the inner fuzz
To prevent them from darkening, as you clean them, place them in a bowl of cold water with squeezed lemon
Drain them and dry them well with paper towels or a cloth
In a bowl, beat the eggs; in another, mix breadcrumbs, Parmesan, salt, pepper, and a bunch of chopped parsley. Pass each wedge first in the egg and then in the breading
As you bread them, arrange the artichokes in a single layer, without overlapping, on the tray or grill, previously greased, and spray them with a bit of oil
Transfer to the fryer and cook at 390°F for 10 minutes. If necessary, turn them halfway through cooking
Perfect cooking and browning! Crunchy on the outside and soft inside

Storage, Tips, and Variations
Breaded artichokes can be stored in the refrigerator for a couple of days, well covered with food wrap.
You can reheat them in the fryer at 340°F for a few minutes. Spray them with olive oil on the surface to make them crispy as if freshly made.
For the breading, you can use Parmesan, Grana, or Pecorino cheese, don’t overdo it with the quantities, too much cheese might overpower and cover the taste of the artichoke, two tablespoons of Parmesan or Grana and one of Pecorino are sufficient.
If you wish, you can add spices of your choice to the breading, I prefer them simple.
