Breaded Pumpkin in Air Fryer

With Pumpkin, we have the opportunity to cook many tasty and healthy dishes just like this side dish of Crispy Pumpkin and Chickpeas that can also be served as a main course. Being very versatile, its use in the kitchen is varied. This time I wanted to try breading it, and my family loved it, as well as devoured it 😂

The Breaded Pumpkin, cooked in the Air Fryer, stays soft but firm inside with a crunchy crust, prepared with breadcrumbs flavored with a bit of cheese, rosemary, and parsley, making this preparation irresistible without overpowering the taste of the pumpkin but enhancing it further. Perfect as an appetizer and to accompany your main dishes.

Breaded Pumpkin in Air Fryer

Ingredients

Ingredients for 2/3 portions

  • 16 oz butternut squash (or delica)
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup Grana Padano cheese, grated
  • 1 bunch parsley, chopped
  • 1 sprig rosemary (small)
  • to taste salt and pepper
  • A few sprays extra virgin olive oil (or vegetable oil)

  • 1 Air Fryer
  • 1 Knife
  • 1 Cutting board
  • 2 Bowls
  • 1 Fork

Steps

How to prepare Breaded Pumpkin in Air Fryer

  • Cut the pumpkin into slices just over 1/4 inch thick, removing the skin and seeds

  • In a container, combine breadcrumbs, salt, pepper, grated Grana, chopped parsley, and rosemary. Mix with a spoon

  • In another container, beat the eggs. Dip the pumpkin slices first in the eggs then in the breadcrumb mixture, ensuring the mixture adheres well

  • Place them, as you prepare them, on the tray or air fryer rack, slightly oiled. Spray a little oil on both sides

  • Cook the pumpkin at 392°F for 13 minutes, checking the cooking after 10 minutes and if necessary, flip the slices and continue for the remaining minutes

  • A nice golden crust should form on the surface

  • Serve it immediately and enjoy, it’s delicious 🤩

Storage of Breaded Pumpkin in Air Fryer

If you have leftovers, you can store the Breaded Pumpkin in the refrigerator for 1 or at most 2 days, well covered with plastic wrap or sealed in an airtight container to then reheat as needed, always in the Air Fryer, at 338°F for a few minutes. It will become crispy almost like freshly made

Tips on Preparing Breaded Pumpkin

I recommend using rosemary sparingly, as a large amount would cover the taste of the pumpkin, remember it’s the star of the dish.
