These Carasau Baskets, cooked in the Air Fryer, are delicious, crunchy, and tempting. My Carasau Baskets are filled with melted Sardinian pecorino, grilled Zucchini Salad with tuna, some pieces of smoked salmon, and to top it all off, crispy Tropea onion that, with its sweetness, contrasts the stronger taste of the pecorino and salmon… a symphony of flavors, textures, and taste that I’m sure you’ll appreciate. If you’re planning a dinner or buffet with friends, this is the recipe for you and will make a great impression on your guests.
You can decide to follow the complete recipe or use just one of the 3 preparations. For example, you can use the baskets as containers to serve salads, pasta, etc., anything your imagination suggests. The zucchini salad can be served as a side dish or with bruschetta. The crispy Tropea onion is perfect to enrich burgers and sandwiches, a simple risotto with sausage or saffron, or can be served on its own to accompany an aperitif. For those who don’t know, Pane Carasau is a typical Sardinian bread made from durum wheat semolina, a bread with very ancient origins; its preparation was a real family ritual. Thanks to its consistency, a very thin and crispy sheet, it lends itself to various kitchen preparations, not only as a bread substitute, but it is also very versatile and can be used for preparing snacks like Pane Guttiau, excellent for accompanying cured meats and cheeses or already filled like Stracchino, reminiscent of the Recco focaccia.

- 14 oz zucchini (about 3 zucchinis)
- to taste extra virgin olive oil (plus 2 tablespoons for seasoning)
- 3 oz canned tuna (in oil or water)
- 1 bunch chopped parsley
- to taste salt and pepper
- 2 Tropea red onions
- 1 tablespoon flour
- A few sprays extra virgin olive oil (or seed oil)
- 2 sheets carasau bread
- to taste Sardinian pecorino (spreadable)
- 1.5 oz smoked salmon

What you need to prepare Carasau Baskets in Air Fryer

Steps
How to prepare Carasau Baskets in Air Fryer
After washing and drying the zucchinis, remove both ends
Cut them into slices about 1/4 inch thick
Do not make them too thin; they should remain plump
Grease the tray or rack of your air fryer
Place the zucchini slices and brush both sides with oil
Cook at 356°F (180°C) for 17 minutes. If you have a smaller air fryer, you will need to do multiple batches, do not overlap them
Once ready, remove the basket or tray and transfer them to a cutting board
Wait for them to cool for a few minutes and cut the zucchini slices into 3 or 4 parts depending on the length
Here are the cut zucchinis
Transfer them into a bowl and add salt

2 tablespoons of extra virgin olive oil
Add the well-drained tuna, chopped parsley, mix and set aside
First, cut off the two ends of the onions, peel them and cut them into rings, not too thin
Like this. Pat them with an absorbent paper sheet
Transfer them into a bowl and add the flour
Mix, trying to make the flour adhere well to the onion
Grease the tray
Remove excess flour from the onion and distribute them on the tray. Spray with oil
Put them in the air fryer and cook at 356°F (180°C) for 10 minutes. Check the cooking and stir them a couple of times
When the onion is golden brown, it’s ready. Set it aside
Wet the bread with water and let it rest for a few minutes before cutting it. You don’t need to soak it; just pass it quickly under the tap. After resting, cut it into strips
Divide the strips in half, depending on the size of the carasau bread sheet. Spread the pecorino in the center of the bread
Insert it into the lightly oiled muffin tin, gently pushing inward to form the cavity
Take the second strip and spread it with pecorino over almost the entire surface
Insert them crosswise, the second strip of bread, inside the muffin tin, and add a little more pecorino in the center, using a teaspoon
Prepare the remaining baskets, and once done, place the muffin tins on the tray or the air fryer drawer rack
Cook at 356°F (180°C) for 4 minutes
The surface should be golden and crisp
After cooking, gently remove the bread baskets from the muffin tins and place them on a tray or plate. Fill them with zucchini salad
Add a few pieces of smoked salmon cut into strips
Finish with crispy Tropea onion and serve your Carasau Bread Baskets

Tips and Storage for Carasau Baskets
For best enjoyment, I recommend filling the Carasau Baskets at the moment, as the filling would soften the bread, losing its crunchiness.
You can store the zucchini salad in the refrigerator in an airtight container or a bowl well covered with plastic wrap. You can prepare it in advance and fill the baskets when needed
I advise against storing the Tropea Onion in the refrigerator; you can keep it in a tightly closed container at room temperature to prevent it from getting moist and losing its crispness. It’s better to consume it immediately and prepare it a few minutes before serving the baskets.
You can find spreadable or melted Sardinian pecorino at the supermarket in refrigerated sections. If you want to substitute it, you can choose another spreadable cheese or robiola whipped with grated pecorino.
