- 9 oz potatoes
- 2 eggs
- 3.5 oz robiola
- 3.5 oz crescenza
- 3.5 oz asiago
- 1 oz emmentaler (grated)

Steps
Start by boiling the potatoes in salted water
Transfer them to the mixer with 1 egg, salt, pepper, and blend
Add the robiola, crescenza, and diced asiago cheeses and operate the mixer again until you get a creamy and homogeneous mixture
Unroll the puff pastry, cut it in half, and gently flatten both sheets with a rolling pin, placing one in the baking pan with its parchment paper. Prick with the tines of a fork and distribute the cheese filling.
Close with the other half of the pastry, sealing the edges well
Brush the surface with the beaten egg
Make incisions with a knife
Sprinkle the surface with grated emmentaler
Bake the pastry at 338°F for 13 minutes, until the surface is golden
Ready! Serve it hot and enjoy your meal!
