Cocoa and Multigrain Shortbread in Air Fryer

These Cocoa and Multigrain Shortbread cookies baked in the Air Fryer are delightful shortbread treats made with a mix of all-purpose flour, multigrain flour with seeds, and cocoa. They are very easy to prepare and vanish in a bite! The use of this multigrain flour gives these cookies a surprising taste, thanks also to the presence of sesame, sunflower, and flax seeds. I recommend it for savory preparations like these Multigrain and Greek Yogurt Mini Pizzas, they’re too good!

The basic recipe is the same as the Chocolate Chip Cookies that I have modified by adding this delicious multigrain flour and cocoa. For the dough of the Cocoa and Multigrain Shortbread, the usual half-hour rest in the fridge is planned, so you can prepare it in advance and bake them later. If you want, you can double the ingredients to make more shortbread cookies.

Ingredients

  • 3/4 cup all-purpose flour
  • 1/3 cup multigrain flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup butter (softened)
  • 2 1/2 tbsp powdered sugar (for finishing)

Steps

  • Before starting, soften the butter at room temperature for 20 minutes

  • Pour the flours into a bowl

  • Add the cocoa, sugar, and egg

  • Mix the ingredients by hand to obtain a sandy mixture

  • Add the now soft butter and knead quickly by hand until you get a compact dough.

  • Place it in the refrigerator for half an hour wrapped in cling film

  • After the rest time in the refrigerator, detach pieces of dough and form balls slightly larger than a walnut. Pour powdered sugar into a bowl and roll them to cover

  • Preheat the air fryer at 340°F for 2-3 minutes and bake for about 20 minutes

  • Once ready, remove them from the fryer and let them cool slightly before transferring to a plate

  • The Cocoa and Multigrain Shortbread are ready to be enjoyed
