Coconut Nutella Ring Cake in Air Fryer

In this recipe, you will discover, with every bite, the sweetness of coconut that occasionally meets the soft and creamy Nutella, creating an incredible harmony of flavors…a cake that will captivate both young and old.

Preparing this Coconut Nutella Ring Cake is very simple, you just need a bowl and an electric whisk to whip the ingredients, and once the cake batter is ready, a spoon to add the Nutella, and in this you must be generous😁 For a successful cake, I recommend keeping both the coconut yogurt (or plain, if you prefer) and the eggs at room temperature for at least half an hour.

Ingredients for a 22/24 cm ring mold

  • 7 oz all-purpose flour
  • 3.5 oz coconut flour
  • 5 oz yogurt (coconut or plain)
  • 6 oz sugar
  • 1/2 cup sunflower oil (or corn oil)
  • 3 eggs (medium)
  • 1 packet baking powder
  • 1 pinch salt
  • 10.5 oz Nutella®
  • to taste coconut flour (or powdered sugar)

  • 1 Air fryer
  • 1 Electric whisk
  • 2 Bowls
  • 1 Ring cake mold 22/24

Steps

How to prepare the Coconut Nutella Ring Cake in Air Fryer

  • Pour the coconut flour, all-purpose flour, and sifted baking powder into a bowl, add the salt, and mix with a spoon

  • In another bowl, whisk the eggs with the sugar until you get a light and fluffy mixture

  • Slowly add the oil and continue to whisk the mixture for a few more minutes

  • Add the yogurt and continue mixing with the whisk

  • Now add the flours all at once

  • Mix for a few minutes

  • Pour the mixture into the ring mold, previously buttered and floured

  • Add spoonfuls of Nutella on top, leaving it on the surface, as the dough will rise during cooking and cover it

  • Preheat the air fryer to 320°F for 2/3 minutes and bake the cake for 30 minutes, check with a skewer, if it is not dry, continue for another 2/3 minutes

  • Remove from the air fryer and let it cool completely before removing it from the mold

  • Sprinkle with coconut flour or powdered sugar, slice it and serve

Storage, Tips, and Variations of the Coconut Nutella Ring Cake

The Coconut Nutella Ring Cake remains soft for many days if well preserved, you can cover it with a dome or plastic wrap

With these quantities, you can use an aluminum ring cake mold of either 22 or 24 cm in diameter. If you have to use a smaller mold to fit your air fryer, pour the batter leaving some space from the edge and with the excess, prepare muffins. You can leave them plain or add a teaspoon of Nutella or a few chocolate chips in the center.
