I love potatoes in all their forms; they are a great side dish for our main courses, whether fried, baked, or boiled, they are always a hit. They also lend themselves well to the preparation of first courses and single dishes like the gateau.
I thought of making a kind of gateau but without eggs, replacing the ham with speck and enriching it with creamy cheese, then wrapping it in puff pastry to make it even more delicious. Soft and velvety inside and crunchy outside… a real delight!!
The meatloaf was cooked in an air fryer but you can easily make it in the traditional oven

Ingredients
- 1.3 lbs potatoes
- 4.2 oz stracchino
- 1.8 oz Grana Padano grated
- 0.7 fl oz milk
- 4.6 oz latteria cheese
- 1.8 oz sliced speck
- 1 rectangular puff pastry
- 1 egg (to brush the pastry)
- to taste poppy seeds

- 1 Mixer
Steps
First, wash the potatoes well; you can boil them with the skin in a pot of water or steam them after peeling. Let them cool and transfer to the mixer, adding the stracchino, Grana, salt, and pepper.
Blend until the mixture is smooth and lump-free
Transfer to a bowl and add the cheese cut into cubes and the speck cut with a knife. You can replace it with diced speck.
Mix well and pour into the center of the puff pastry previously pricked with a fork.
Close the roll using parchment paper
Seal it well and transfer it to a baking dish, preferably without parchment paper, and brush the surface with beaten egg.
Sprinkle with poppy seeds
Place the dish in the air fryer and set the program to 356°F for 22 minutes, until the pastry is golden
Wait for it to cool and serve
Tips for Oven Baking
Unlike the air fryer, the oven needs preheating. Bake at 374°F for 30 minutes or until the pastry is golden
