Crispy Rice Croquettes with Smoked Cheese in Air Fryer

These rice croquettes are delicious. The second cooking, in this case in the air fryer, makes them crispy and melty. Beautiful to bring to the table and easy to prepare. You can also make them with leftover saffron rice, recycling rice from the previous day.

  • 1/2 white onion
  • 1 shallot
  • to taste extra virgin olive oil
  • 1/2 cup grated Grana Padano
  • 1 oz Pecorino Romano
  • 2 nuggets butter
  • 3/4 white wine
  • 4.2 cups vegetable broth
  • 1 egg
  • to taste sesame seeds
  • 27 cubes smoked cheese
