Crumbled Cake with Orange Cream in Air Fryer

If you love simple desserts with an intense aroma, this Crumbled Cake with Orange Cream cooked in an air fryer is the perfect choice. Crunchy on the outside, soft and creamy on the inside, it is prepared without stress, without waiting or long resting times. It cooks quickly in the air fryer, without sacrificing taste.

The peculiarity of this crumbled cake is that the cream contains neither milk nor eggs, making it very light. It is prepared with orange zest and juice, and for an even more intense taste, you can simply add a teaspoon of orange paste. The same goes for the crumbled shortcrust pastry: the aroma will be truly amazing!

Preparing the Crumbled Cake with Orange Cream in air fryer is very simple: you won’t need any special tools and, apart from the time needed to cool down the cream, it won’t be necessary to let the shortcrust pastry rest in the fridge. While preparing the shortcrust pastry, in fact, the cream will have already reached the ideal temperature for use.

In this recipe, I chose to bake the base plain first, then add the cream and crumbled shortcrust pastry, completing the baking afterwards. With this step, the cream will remain softer, without drying out, and the base will be perfectly cooked: an ideal solution especially for those using a air fryer with single resistance and have difficulty cooking desserts evenly, even at the bottom.

Ingredients

Ingredients for a 20/22 cm mold

  • 6.8 fl oz orange juice (2 medium oranges)
  • 1.8 oz sugar
  • 0.88 oz cornstarch
  • 1 tsp orange paste (or a piece of untreated peel)
  • 2.4 cups all-purpose flour
  • 3.5 oz butter (cold from the fridge)
  • 3.5 oz sugar
  • 1 egg
  • 1 lemon (untreated peel)
  • 1 tsp orange paste (or untreated peel of 1 orange)
  • 1 pinch salt
  • powdered sugar

Steps

Preparation of Crumbled Cake with Orange Cream in Air Fryer

  • Squeeze the orange juice and filter it with a sieve. Pour into a small pot the cornstarch, the sugar, stir and add 1 teaspoon of Orange Paste or alternatively a piece of peel from the squeezed oranges. Place the pot on the stove over low heat and add the juice a little at a time, stirring continuously until it thickens

  • Remove the peel, if used, set it aside, let it cool for a few minutes, and cover with plastic wrap

  • In a large bowl, pour flour, sugar, the pinch of salt, egg, grated lemon peel, orange (if not using the paste) and mix with a spoon, obtaining a sandy mixture

  • Add 1 teaspoon of orange paste (optional) and the cold butter, cut into cubes, and knead quickly with your hands. You will get many crumbs

  • Butter and flour the mold and line the base with half of the dough: press and join the crumbs with your hands, creating a compact shortcrust pastry and rising slightly on the edges. Prick the bottom with the tines of a fork.

  • In the meantime, preheat the fryer to 356°F (180°C) for 2/3 minutes. Cut the parchment paper, cover the base of the tart, and distribute the dry beans or weights. Transfer the mold to the fryer rack

  • Bake at 356°F (180°C) for 15 minutes or until the edges are colored

  • Remove the drawer, remove the parchment paper and beans, take the cream and stir it vigorously with a whisk to make it creamy again. If it seems too dense, add a few tablespoons of water and stir again with the whisk. Cover the crust with the cream, leaving a little edge, and level it

  • Distribute the remaining crumbs

  • Finish baking at 338°F (170°C) for 15 minutes

  • Until the surface becomes golden

  • Remove it from the fryer, let it cool, and transfer it to a plate. Sprinkle the surface with powdered sugar and slice and serve your Orange Cream Crumbled Cake

Storage and Tips

The Crumbled Cake can be stored for 3/4 days at room temperature covered with a glass dome or plastic wrap

Use only untreated oranges, you will need the peel if you don’t have the orange paste. For the cream, you can choose to use it grated or just a piece and then remove it

Oven Baking

It is possible to bake the crumbled cake in a preheated oven: first plain at 356/374°F (180/190°C) for 15 minutes or until the edges are colored. Then at 338°F (170°C) for 15/20 minutes after removing the parchment paper, beans, filling, and topped with crumbled shortcrust pastry
