Eggs in an air fryer, are a convenient and quick way to cook eggs. A delightful dish that will surprise you: the soft and creamy yolk ready to be dipped in bread.
This version with peas and saffron is a Sicilian recipe that I have always prepared in a pan with a base of peas, previously cooked with chopped onion and with the addition of saffron at the end of cooking. Using the air fryer and molds, the eggs and peas are already divided into single servings: just lightly grease the molds with a little oil, place the peas at the base, and gently lay the egg on top.

How to prepare Eggs with Peas and Saffron in Air Fryer
Preparing the peas is very simple. Coarsely chop the onion and let it wilt over low heat in a pan with a drizzle of extra virgin olive oil. Once wilted, add the peas and let them flavor, pour in some water and cook for 10/15 minutes until the peas are softened
Take a glass and dissolve the saffron in about 2 inches of warm water and pour it into the pea pan, stir and let it simmer for 1 minute. Add salt and pepper if you like
Take the molds, lightly oil them and pour the peas at the base
Place the eggs on top of the peas, 1 per mold, and cook at 340°F for 7 minutes, maximum 8, otherwise the yolk will set and won’t be creamy
Take them out of the air fryer and, with the help of a teaspoon, gently detach from the edges of the mold and transfer it to the plate
Add salt and pepper and…enjoy your meal!
