- 5 eggs (medium)

How to prepare the scallion omelette
Remove the green part and the first layer, wash them and slice them into rings
Transfer them to a small pot with a drizzle of olive oil and let them wilt, add a tablespoon of water, and once ready, let them cool for a few minutes
In a bowl, beat the eggs, add the grated Grana, salt, pepper, and mix well
Transfer the eggs to a lightly oiled pan, add and distribute the scallions
Cook at 338°F for 12 minutes
Until golden
