- 3/4 cup hazelnut flour
- 2 eggs (medium at room temperature)
- 1/2 cup sugar
- 1 pinch salt
- 6 teaspoons Nutella®
- to taste chocolate chips (optional)

Steps
Preparation of Hazelnut and Nutella Cakes in Air Fryer
Place 6 generous teaspoons of Nutella on parchment paper, freeze them for 10/15 minutes, just enough time to prepare the batter
Take two bowls, break the eggs, and separate the yolks from the whites
With the electric whisk, beat the egg whites until stiff peaks form, with a pinch of salt, and set aside
In the other bowl, beat the yolks with the sugar until you get a light and fluffy mixture.
Add the hazelnut flour and gently incorporate it little by little, mixing well.
With a spatula, gradually fold in the egg whites, mixing from bottom to top, without deflating the mixture
The mixture is ready, you can start preheating the fryer for 2/3 minutes at 340°F
Place the paper cups inside the aluminum ones. Using a spoon, pour the hazelnut batter, take the Nutella from the freezer and place it in the center of each cup. Cover with more batter, leaving a little space between the mixture and the cup edge
Optionally, add the chocolate chips on top and place the cups on the tray or grill
Transfer them to the fryer and bake with the bake or air fry program at 340°F for 20/22 minutes
Check the cooking with a toothpick and once ready, leave them for 5 minutes in the fryer with the door slightly open. This way, you will avoid a sudden temperature drop, which would cause the batter to collapse, losing volume and texture
Take them out and let them cool completely

Bake in a preheated static oven at 356°F for 20/25 minutes. The cakes should be puffy and golden on the surface, perform the toothpick test and adjust according to your oven

Store the Cakes in an airtight container or wrap each cake individually with plastic wrap. They remain soft for 3/4 days
With these quantities, you can also make a cake using an 18 cm pan or double the quantities and use a 22 cm pan
If you use only aluminum molds, you will need to butter and flour them, if you use silicone ones, it is not necessary
You can cover the surface with hazelnut sprinkles, chocolate chips, or both, or with sugar granules or with sugar granules and chocolate chips, or simply dust them with powdered sugar once they are cool
You can make this recipe not only gluten-free but also completely lactose-free by replacing the Nutella with the vegan version, which note is suitable for those who are intolerant, but not for those with allergies because it may contain traces of milk due to contamination, or with other lactose-free hazelnut spreads available in all supermarkets
