Meatballs with Saffron Potatoes in Air Fryer

Ingredients

  • 1.1 lbs mixed ground meat (beef/pork)
  • 2.1 oz stale bread
  • 0.4 cups milk
  • 1.1 oz Grated Grana Padano
  • 1 packet saffron
  • as needed chopped parsley (fresh or frozen)
  • as needed salt and pepper
  • 1.1 lbs potatoes
  • Half golden onion (or white)
  • as needed flour
  • A few sprays extra virgin olive oil

Steps

Preparation of Meatballs with Saffron Potatoes in Air Fryer

  • Start by cutting the stale bread into pieces and adding it to a bowl with the milk. Let it sit for ten minutes

  • The bread is ready to use once it has absorbed all the milk

  • Add the ground meat, parsley, grated Grana, salt, and pepper to the same bowl

  • Mix all the ingredients well

  • Separate pieces of the mixture and form meatballs

  • Take another bowl, add some flour and coat the meatballs completely

  • Spray them with a little oil and let them brown in the air fryer at 356°F for 7/8 minutes

  • Meanwhile, peel the onion and add it to the browned meatballs, put the pan back in the air fryer and cook again at 356°F for about 3 minutes

  • While the meatballs and onion are cooking, move on to the potatoes: wash, peel, and cut them into not too large pieces

  • Add the potatoes to the meatballs and salt to taste

  • Add a coffee cup of water and stir

  • Cook at 338°F for 10 minutes, stirring a couple of times

  • Dissolve the saffron in a coffee cup of warm water

  • After the first 10 minutes of cooking add the dissolved saffron to the meatballs with potatoes, put the pan back in the air fryer and cook again at 338°F for another 10 minutes, always stirring a couple of times and finish cooking by raising the temperature to 392°F for 10 minutes.

  • Check the cooking of the potatoes: they should not break down, they should remain firm but cooked. If necessary, extend the cooking for a few more minutes

  • Adjust the salt if necessary and serve your meatballs with saffron potatoes… enjoy your meal!
