Today I present to you this delicious Multigrain Tart with Fruit and Lemon Cream, cooked in an Air Fryer. Many think that it’s not possible to bake desserts in an Air Fryer and that the result is not satisfactory… with yet another recipe I want to show you that’s not the case! A few tips for achieving a fantastic result: use the correct and suitable cake pan for baking desserts, ideally non-stick or aluminum ones; place the tray on the perforated grid; use the correct temperatures and not too high, and a short preheating of the fryer for a few minutes helps.

By now you know it’s not the first time I propose tarts cooked in an Air Fryer and all my desserts are prepared in the fryer and I avoid turning on the oven. The Multigrain Tart with Fruit and Lemon Cream is a fresh dessert, perfect for this season. Its characteristic is a crumbly crust, made with a flour I really appreciate, and it’s excellent for both sweet and savoury preparations, a mix of cereal flours with seeds. The Multigrain Tart with Fruit and Lemon Cream is filled with a velvety and smooth lemon cream, garnished with fresh fruit, in this case blueberries and strawberries, but you can use other types of fruit according to your taste and the season. What you need to prepare the Multigrain Tart with Fruit and Lemon Cream in Air Fryer

  • 1 Small pot

How to prepare the Multigrain Tart with Fruit and Lemon Cream in Air Fryer

  • Start with the lemon cream, which you will initially cool at room temperature and then in the refrigerator for 2/3 hours. For preparation, follow the steps of the Muffins with Lemon Cream using the ingredients I indicated in this recipe

  • In a mixer, in a planetary mixer, or if you prefer by hand, mix flour, cold butter, and powdered sugar until you get a sandy mixture

  • Transfer it to a work surface or a bowl, add the egg yolk, grated lemon, a pinch of salt, and mix the dough by hand

  • Once you have a smooth and homogeneous dough, wrap it with food wrap and place it in the refrigerator for half an hour

  • After the rest time, remove the wrap and roll it out between two sheets of lightly floured parchment paper

  • Line the pan with the dough you previously rolled out, greased, and floured. Poke the base with a fork and put it in the freezer for 15 minutes or in the refrigerator for half an hour.

  • After the rest time, cover the dough with parchment paper and cut it as much as possible to uncover the edges. Add dry beans inside.

  • Preheat for 2/3 minutes and bake at 375°F for 10 minutes, bake program for those who have it, or set the degrees and times manually

  • The edges should be slightly golden

  • After the first baking, remove the pan, discard the beans, the parchment paper, and put the tart back in the air fryer

  • Now bake at 340°F for 20 minutes

  • The crust is ready, let it cool completely before removing it from the pan. Wait a few hours before filling it

  • Take the cream out of the refrigerator, whisk it before using it so that the consistency becomes creamy again. With the help of a spatula, cover the pastry shell leveling it well. Now you can fill it with the fruit. I will show you how I filled it, but you can do it to your liking. Start by filling it with blueberries

  • After cutting the strawberries into slices, lay them on the cream

  • Put it back in the refrigerator until serving time, I recommend at least an hour
