The Nut Cake in Air Fryer is a soft and easy-to-make dessert, perfect for breakfast and snack, but if you want to serve something simple at a dinner with friends, it is just as great as a dessert at the end of the meal. A pantry cake with a delicious and rustic taste for the soft and crunchy contrast given by the nuts included in the dough, partly made into flour and partly coarsely crumbled. This is a recipe by Tavolarteegusto and I couldn’t help but try it since I love desserts with nuts, especially walnuts, often featured in my preparations like in my Rustic Cookies in Air Fryer and in the Stuffed Apples in Air Fryer
To prepare the Nut Cake, you only need a few ingredients that you whip up in a bowl and once again the Air Fryer cooking proved perfect and like all the desserts I prepare in the fryer, they can also be baked in a traditional oven.

Ingredients
- 1 cup all-purpose flour
- 4.2 oz walnut kernels (2.5 oz to be powdered and 1.7 oz to be chopped with a knife)
- 3/4 cup granulated sugar
- 2 eggs (medium or large at room temperature)
- 2/3 cup plain yogurt
- 1 packet baking powder (vanilla flavored or add 1 packet of vanilla sugar)
- 1/4 cup sunflower oil
- to taste powdered sugar

Steps
Start by powdering the walnuts in the chopper
On a cutting board, coarsely chop the remaining walnuts with a knife
Beat the eggs with the sugar using an electric whisk until the mixture is light and fluffy
Gradually add the oil while beating at high speed, then add the yogurt at room temperature, continuing to beat, and finally the sifted flour, baking powder, and powdered walnuts, beating at low speed until a smooth and homogeneous mixture is obtained. Now add the coarsely chopped walnuts and fold in with a spatula or spoon from the bottom up
Pour the mixture into the previously greased and floured pan
Place the pan in the air fryer and cook at 320°F for 35 minutes with the bake or dessert program
Perform the toothpick test, the cake is ready if it comes out completely dry. Let it cool and remove it from the pan
Sprinkle with powdered sugar and serve your nut cake
Tips, Variations, and Storage of Nut Cake
I recommend taking out the eggs and yogurt from the fridge at least 20 minutes before preparing the cake. You can add chocolate chips or raisins to the nut cake batter, and replace the powdered sugar by glazing it with honey. The cake keeps for 3/4 days at room temperature, better if covered.
