Suggested Tools

  • 1 Small Pot
  • 3 Bowls
  • 1 Spatula
  • 1 Springform Pan 9/10 inches
  • 1 Electric Whisk
  • 1 Lemon Zester

  • 1 Small Pot

Steps

How to make the Orange and Chocolate Cake with Jam Glaze

  • Melt the chocolate in a bain-marie: put some water in the pot, insert a bowl with the broken chocolate in it (I used chips). Use a large bowl so that the water does not come into contact with the bottom of the bowl. The chocolate should melt slowly with heat. Stir often

  • Once melted, remove the bowl from the heat, add the butter, and mix well with a spatula. Set aside and let it cool before adding it to the batter

  • While the chocolate is cooling, beat the eggs with sugar, grated orange zest, and a pinch of salt. You need to get a light and frothy mixture

  • Add the oil gradually and keep beating the mixture

  • Pour a few drops of orange flavoring, 4/5 are sufficient, but you can vary according to your taste and the intensity you want to achieve. Stir again

  • Now you can add the melted chocolate, which is now cool

  • Mix with the whisk for a few minutes

  • Now incorporate the sifted flour and cocoa. Use the whisk to mix until you get a smooth batter

  • Finally, add the sifted baking powder and gently mix with a spatula

  • Pour the batter into a 9/10-inch springform pan (I used a 10-inch one), greased and floured. Level the surface and preheat the air fryer at 320°F for 2/3 minutes on bake or air fry setting

  • Insert the pan and start cooking still at 320°F for 25/30 minutes. Do the toothpick test only after 20 minutes have passed

  • Once cooking is finished, leave the cake inside with the door slightly open for 5 minutes

  • Remove the cake from the air fryer and let it cool completely before removing it from the pan

  • Prepare the glaze by bringing the marmalade and water to a boil, making sure to stir with a whisk. It will only take a few minutes. Let it cool slightly before using

  • Evenly spread the glaze over the entire surface of the cake, including the edges, with a brush

  • You can decorate it with fresh orange slices for a scenic effect

  • This orange and chocolate cake with jam glaze is a little everyday luxury: soft, fragrant, and with a glossy finish that makes it irresistible, ready to win hearts and palates!.

Tips and Variations

You can choose the type of chocolate you prefer, dark for a more intense flavor or milk for a sweeter cake.

For an extra touch, add chopped hazelnuts or almonds to the batter or white chocolate chips.

You can substitute the oil part with butter, in this case, you will add a total of 8 1/2 tbsp butter to the melted chocolate.

If you want a completely butter-free version, replace it with 1/2 cup sunflower oil to be added to the egg and sugar mixture.

If you don’t have compote marmalade to achieve the same intense flavor, I recommend replacing it with a bitter orange marmalade that goes great with dark chocolate. Compared to marmalade, compote contains less sugar and a higher percentage of fruit, but if you have homemade orange marmalade, it will give a more authentic flavor. Orange marmalade is a classic choice, but you can try with apricot or berry marmalade for a more personal touch.

As an alternative to the glaze, you can decorate the cake with an orange and sugar syrup or a dusting of powdered sugar.
