Pane Carasau is a typical Sardinian flatbread made from durum wheat semolina, with very ancient origins — its preparation used to be a real family ritual. Thanks to its texture — a very thin, crispy sheet — it adapts to many preparations in the kitchen, not only as a substitute for bread. In fact, this dish is not only an excellent choice for an aperitif, but it can also become a refined starter for a special dinner.
The combination of the crispy Pane Carasau, the cooked ham and the creamy Gorgonzola will make you fall in love. Make it in your air fryer and surprise your guests with a delicious treat that blends tradition and innovation. Ingredients
Ingredients to prepare Pane Carasau with Cooked Ham and Gorgonzola
- 5 slices pane carasau
- 7 oz Gorgonzola
- 7 oz cooked ham
- 3 tbsp grated Grana Padano
- to taste extra virgin olive oil

What you need to prepare Pane Carasau with Cooked Ham and Gorgonzola
- 1 Air fryer
- 1 Baking pan 9.5 in (24 cm)
Steps
Start by quickly wetting the Pane Carasau sheets under running water, place them on a work surface and wait just a couple of minutes for the bread to absorb the water and soften.
While the sheets rest, oil the bottom of a baking pan with extra virgin olive oil.
Place the first sheet in the pan, season lightly with salt and drizzle with a little extra virgin olive oil.
Cover the sheet with slices of cooked ham and a few pieces of Gorgonzola, and continue this sequence until the ingredients are finished.
Finish with the last Pane Carasau sheet. Sprinkle the surface with grated Grana Padano and extra virgin olive oil.
Place the pan in the air fryer and cook at 338°F for 10 minutes, then raise to 392°F and continue for another 7 minutes or until the surface is golden.
Here is the Pane Carasau ready with a lovely crunchy golden top.

Tips and storage for Pane Carasau with cooked ham and gorgonzola
Pane Carasau with cooked ham and Gorgonzola can be stored in the refrigerator for a few days, even in its pan covered with cling film. You can reheat it for a few minutes in the air fryer when needed.
If you have a smaller air fryer you can use a pan sized to fit your appliance.
It is not essential to use round Pane Carasau of the same size I used; you can find it packaged in different shapes, including rectangular. The important thing is to cover the base of the pan with the sheets and the ingredients.
