Pasta and Lentils

Pasta and Lentils is a warming first course, a true comfort food. What could be better after a long and cold day than a rich and tasty dish?!

Pasta and Lentils is simple and quick to prepare, no sautéing, everything is cooked raw in the pot with the addition of herbs and garlic that enhance the flavor of this dish. I make it just like my grandmother and my mother still do today, I just added a carrot and a potato to make the Pasta and Lentils creamier and once ready, a drizzle of raw oil, a grind of pepper, and you’ll taste how good it is.

For this recipe, I used dried lentils, which do not need to be soaked in water, they can be replaced with canned ones, a useful alternative for those who don’t have much time to spend in the kitchen

Pasta and Lentils

Ingredients

Ingredients for 4 servings

  • 6 oz dried lentils
  • 1 potato
  • 1 carrot
  • 2 leaves bay leaves
  • 1 sprig sage (or a few leaves)
  • 1 garlic
  • 2 tbsps tomato sauce
  • 7.7 oz pasta (lumache)
  • 1 drizzle extra virgin olive oil
  • to taste black pepper

Tools

  • 1 Pot
  • 1 Cutting Board
  • 1 Knife

Steps

  • Start by rinsing the lentils under running water and transfer them to a pot. Add water, the garlic clove cut in half and without the core, the bay leaves, sage, and two tablespoons of tomato sauce. Turn on the stove and start cooking

  • Meanwhile, cut the potato and carrot into small cubes

  • Add them to the lentils and cook for about 15 minutes until the lentils are ready.

  • When the lentils with potatoes and carrots are ready, adjust the salt

  • Add water to cook the pasta, I chose lumache but it’s also perfect with ditali or mixed pasta. When the water boils, add the pasta and follow the cooking times indicated on the package. If necessary, add a bit of water, a little at a time, and not too much, or you risk having a dish that’s too brothy.

  • A drizzle of EVO oil, a grind of black pepper, and enjoy your Pasta and Lentils!! Delicious
