Pasta with Eggplants in Air Fryer

Pasta with Eggplants, cooked in an Air Fryer, is one of the first courses that always pleases everyone in the family. It is a rich and hearty dish, perfect for a family dinner or lunch with friends. This recipe is based on “fried” eggplants and meat ragù, enriched by the strong flavor of spicy provolone and completed with a sprinkle of grated Grana Padano and breadcrumbs, creating an irresistible crust on the surface. You can prepare pasta with eggplants in advance or divide the various preparations over different days. For example, I prepare the ragù the day before and the eggplants the next day and then assemble everything with the pasta. If you don’t have an air fryer, you can fry the eggplants in a pan and bake the pasta in the oven. I’ll leave the instructions at the bottom of the recipe

  • 2 eggplants (black or purple)
  • 5 tablespoons extra virgin olive oil (plus some spray to add halfway through cooking)

  • 1 white onion (or golden)
  • 17.6 oz tomato puree
  • 1/2 cup red wine

  • 12 oz tortiglioni (or rigatoni)
  • 6 oz spicy provolone (4.9 oz diced plus 1.4 oz grated)
  • 1 oz grated Grana Padano (plus one tablespoon)
  • to taste breadcrumbs

How to prepare Pasta with Eggplants in Air Fryer

  • Start with the eggplants: after washing and drying them, remove the two ends and cut them into not too small pieces. Transfer everything into a large bowl, add the oil, and mix with a spoon

  • Transfer the eggplants directly onto the grid of your air fryer

  • Cook at 356°F for 20 minutes, stirring a couple of times. I recommend spraying them with oil again halfway through cooking. Once ready, salt to taste and set aside

  • Finely chop the onion and let it soften in a pan with a good amount of extra virgin olive oil

  • When the onion is softened, add the ground meat and let it brown over medium heat, stirring

  • Deglaze with the wine and let it evaporate over high heat

  • When the wine is completely evaporated, add the tomato puree and cook for about 30 minutes over low heat. Salt to taste. When the ragù is almost ready, put the pot with salted water on the stove to cook the pasta. Drain it 2/3 minutes before the times indicated on the package. Prepare the diced provolone

  • When the pasta is ready, take it with a slotted spoon and pour it into the ragù pan. Keep a little cooking water aside in case the sauce is too dry. Add the eggplants and once you have mixed well, you can add 140 g of diced provolone and the grated Grana Padano and mix again

  • Transfer everything into a baking dish, sprinkle the surface with a tablespoon of Grana, the remaining 40 g of grated provolone, a thin layer of breadcrumbs, and drizzle with extra virgin olive oil

  • Insert the baking dish in the air fryer and set to 338°F for 15 minutes
