  • 2 1/2 cups all-purpose flour
  • 3/8 cup butter
  • 2/5 cup sugar
  • 2 egg yolks
  • 1/2 baking powder (8 g)
  • 1 lemon (untreated peel)
  • 1 pinch salt
  • 3 Abate pears
  • 1.4 oz amaretti
  • 1 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • to taste powdered sugar

Steps

Pear Pastries Preparation

  • In a bowl, mix the flour, sugar, baking powder, egg yolks, grated lemon peel, and salt

  • Quickly work the mixture with your fingertips until you obtain many crumbs

  • Butter a rectangular mold and sprinkle with breadcrumbs

  • Use 3/4 of the mixture, place it in the mold, press to compact, and cover the entire base creating a small edge along the perimeter

  • Now, focus on the filling: grate the pears with a grater with large holes after washing, peeling, and removing the core and seeds.

  • Combine the grated pears and crumbled amaretti cookies in a bowl and mix with a spoon

  • Spread the pear mixture over the pastry layer, level it, and cover with the remaining crumbs. Sprinkle the surface with cinnamon and a tablespoon of granulated sugar

  • Preheat the air fryer at 320°F for 2/3 minutes, place the mold on the grid, and bake using the bake program for 35 minutes until the surface is golden

  • Remove from the oven and let cool

  • Cut the pastries into small rectangles, sprinkle with powdered sugar, and serve. They are delicious.
