  • 2 1/2 cups all-purpose flour
  • 6 tbsps butter
  • 1/3 cup sugar
  • 2 egg yolks
  • 1/2 baking powder (8 g)
  • 1 lemon (untreated peel)
  • 1 pinch salt
  • 3 Abate pears
  • 1 1/2 oz amaretti
  • 1 tbsp granulated sugar
  • 1/2 tsp cinnamon powder
  • as needed powdered sugar

  • 1 Food scale
  • 1 Grater large holes
  • 2 Bowls
  • 1 Lemon zester
  • 1 Spoon
  • 1 Teaspoon

Steps

Preparation of the pear treats

  • In a bowl, work the flour, sugar, baking powder, egg yolks, grated lemon peel, and salt

  • Quickly work with your fingertips until you obtain many crumbs

  • Butter a rectangular pan and sprinkle it with breadcrumbs

  • Use 3/4 of the mixture, place it in the pan, press to compact it, and cover the entire base creating a small edge around the perimeter

  • Now, focus on the filling: grate the pears with a large-hole grater after washing, peeling, and removing the core and seeds.

  • Combine the grated pears and coarsely crumbled amaretti in a bowl and mix with a spoon

  • Spread the pear mixture over the pastry layer, level it, and cover with the remaining crumbs. Dust the surface with cinnamon and a tablespoon of granulated sugar

  • Preheat the air fryer to 320°F for 2/3 minutes, place the pan on the grill, and bake with the bake program for 35 minutes until the surface is golden

  • Remove from the fryer and let it cool

  • Cut the cake into small rectangles, dust with powdered sugar, and serve. They are delicious.
