Ingredients for a rectangular pan 9×7 inches
- 2 1/2 cups all-purpose flour
- 6 tbsps butter
- 1/3 cup sugar
- 2 egg yolks
- 1/2 baking powder (8 g)
- 1 lemon (untreated peel)
- 1 pinch salt
- 3 Abate pears
- 1 1/2 oz amaretti
- 1 tbsp granulated sugar
- 1/2 tsp cinnamon powder
- as needed powdered sugar

- 1 Grater large holes

- 1 Lemon zester

Steps
Preparation of the pear treats
In a bowl, work the flour, sugar, baking powder, egg yolks, grated lemon peel, and salt
Quickly work with your fingertips until you obtain many crumbs
Butter a rectangular pan and sprinkle it with breadcrumbs
Use 3/4 of the mixture, place it in the pan, press to compact it, and cover the entire base creating a small edge around the perimeter
Now, focus on the filling: grate the pears with a large-hole grater after washing, peeling, and removing the core and seeds.
Combine the grated pears and coarsely crumbled amaretti in a bowl and mix with a spoon
Spread the pear mixture over the pastry layer, level it, and cover with the remaining crumbs. Dust the surface with cinnamon and a tablespoon of granulated sugar
Preheat the air fryer to 320°F for 2/3 minutes, place the pan on the grill, and bake with the bake program for 35 minutes until the surface is golden
Remove from the fryer and let it cool
Cut the cake into small rectangles, dust with powdered sugar, and serve. They are delicious.
