Polenta and Lard Crostini in Air Fryer

For an appetizer, a brunch, a buffet, or as a starter to begin a dinner with friends, the polenta and lard crostini, cooked in an air fryer, are an incredibly tasty idea. These polenta and lard crostini can be prepared in advance and cooked on the spot: just prepare the polenta, pour it into a tray in a fairly thin layer, once cooled it is portioned, placed in the fryer to create a crust on the surface and as soon as it is out of the oven, add the slices of lard that with the heat, will melt and make this dish very tempting. So if you are organizing a party and want something that is not only easy to prepare but also deliciously tasty, well, polenta and lard crostini are the right idea!

Ingredients

  • 4.4 oz instant polenta
  • 2 cups water
  • 1 tsp salt (coffee spoon)
  • as needed pepper
  • 1.8 oz lard (sliced)
  • as needed extra virgin olive oil (to spray the surface and grease the tray)

Steps

  • (Follow the package instructions to prepare the polenta) Bring salted water to a boil in a saucepan, as soon as it boils, pour the flour in a rain and mix with a hand whisk to avoid lumps and cook for 3 minutes

  • Pour the hot polenta into a rectangular tray, previously oiled. Let it cool for 10/15 minutes

  • Cut the polenta into 10 pieces, add a bit of pepper and spray the surface with oil

  • Place the tray in the fryer and cook at 392°F for 10 minutes and increase to 464°F for another 5 minutes until a crust is formed

  • Remove and place the polenta crostini on a platter or serving plate. Distribute a slice of lard on each crostino which will melt with the heat. You can serve your polenta crostini

Preparation Tips for Polenta and Lard Crostini in Air Fryer

To prepare the Polenta and Lard Crostini, you can also use ready-made polenta, just slice it and gratinate it in the fryer

If your fryer reaches a maximum temperature of 392°F, continue cooking at this temperature until desired browning

If you don’t have the size of the tray I used, you can use one suitable for your fryer, the crostini will be a bit higher. Or you can place them directly on the grill once cut and do multiple cookings based on the drawer’s dimensions.
