Potato and Spinach Casserole in Air Fryer: light, quick, a comforting, healthy, and very easy dish to prepare. It is a perfect recipe for the whole family: soft, creamy, with a rich filling, and a delicious golden crust on top thanks to the hot air cooking.

The Potato and Spinach Casserole in Air Fryer will soon become one of your favorite dishes and is ideal for using up leftover boiled potatoes, like for the gateau, to transform your spinach into a rich and satisfying dish: potatoes and spinach are a perfect combination, rich in fiber, vitamins, and minerals.
With few ingredients, maximum result: you can serve it as a second course, main dish, or side. A fresh salad, a legume cream, or a side of grilled vegetables will complete your meal in a balanced way, an easy, light recipe ready in less than 30 minutes

Ingredients

Ingredients for 4 servings

  • 12.3 oz spinach (fresh)
  • 1 drizzle extra virgin olive oil
  • 1 clove garlic
  • 0.7 oz grated Parmesan cheese (or Grana Padano)
  • to taste nutmeg
  • to taste salt and pepper
  • 3.5 oz cooked ham
  • 21.2 oz potatoes
  • 1 egg
  • 1.8 oz grated Parmesan cheese (or Grana Padano)
  • to taste nutmeg
  • to taste salt and pepper
  • 4.9 oz provolone
  • to taste butter (for greasing the pan)
  • to taste breadcrumbs (for coating the pan and for the surface)

Steps

Preparation of the Potato and Spinach Casserole in Air Fryer

  • In multicooker Ninja Multicooker 12 in 1: pour the spinach into the combi pan without the rack with a clove of garlic and a drizzle of oil.

  • Insert the pan at the first level, start the Sear/Sauté program at HI temperature for 7/8 minutes keeping the door open

  • Check the cooking, remove them from the combi and discard the garlic
    In pan: place the spinach in a large pan with a clove of garlic and a drizzle of oil, salt. Cover with a lid and let them soften, it will take a few minutes.

  • Squeeze them very well to remove all excess water. Chop them coarsely with scissors and mince with a knife.

  • Add the grated Parmesan, adjust with salt, add pepper and nutmeg

  • Cut the cooked ham into pieces and add it to the spinach

  • Steam cooking (my method) in Ninja Multicooker 12 in 1: fill the combi pan with 1 liter of water. Wash, peel, and cut the potatoes into pieces

  • Switch to combi cooker mode and set and start the steam program for 10 minutes.
    Cooking in pot: wash, peel, and cut the potatoes into pieces, boil them in salted boiling water until soft. If you want, you can also boil them whole with the skin and mash them with a potato masher without peeling them. Use the method that is most convenient for you

  • Once ready, drain the potatoes and transfer them to a bowl, mash them while still hot with a fork to get a smooth puree. Set aside to cool for a few minutes

  • Add to the potatoes, egg, Parmesan, salt, pepper, nutmeg, and mix until you get a compact mixture

  • Grease or butter a pan suitable for the air fryer (mine in Pyrex) and coat it with breadcrumbs. Pour half of the potato mixture

  • Spread the spinach leaving a bit of a border

  • Cover with slices of provolone

  • Now cover with the remaining mixture, leveling it by pressing slightly, especially the edges, and sprinkle the surface with breadcrumbs and a drizzle of oil.

  • Now insert the pan in the air fryer and cook at 356°F for 15–18 minutes, or until the surface is golden and crispy.

  • Once ready, let the casserole rest for 5 minutes before serving, so it sets perfectly.

  • Excellent hot or warm, paired with a fresh salad, roasted tomatoes, or a legume cream.
    It’s a perfect recipe for quick lunches, light dinners, and weekly meal prep.

Tips and Variations

Replace Parmesan with Pecorino for a stronger flavor, provolone with mozzarella, make sure to drain it well of its whey.
For a vegetarian version, omit the cooked ham.

You can prepare the casserole in advance and bake it at the last moment.
If using frozen spinach, thaw and squeeze well: they are perfect for this recipe.
Squeeze the spinach well after cooking to avoid releasing too much water.

Storage of Potato and Spinach Casserole

The Potato and Spinach Casserole can be stored in its pan in the fridge for a couple of days, well covered with cling film, and heated in the air fryer or oven for a few minutes before serving.
