The frittata, cooked in the air fryer, is lighter and more digestible, without sacrificing taste. I now only prepare them this way, no more pans and oil splattering on the stovetop.
This Potato and Tropea Onion Frittata is a versatile and nutritious dish, in addition to the main ingredients I added grated salted ricotta which you can replace with Grana Padano or Parmesan or, if you want a more intense flavor, Pecorino or Provolone cut into cubes are perfect. Ingredients for 3/4 servings
- 6 eggs (medium/small)
- 1.1 lbs potatoes
- 2 Tropea red onions
- 1 coffee cup of milk
- 2 tablespoons extra virgin olive oil (plus some sprays and to grease the pan)
- A few leaves mint (fresh)
- 1.8 oz salted ricotta (or other grated cheese)
- to taste salt and pepper

- 2 Non-stick baking pans (1 for cooking potatoes and onions and 1 for the round or square frittata)
- 1 Bowl

Steps
Start with the potatoes and onions. Wash the potatoes thoroughly and peel them. On a work surface or cutting board, cut them into small cubes. Transfer them to a bowl and set aside
Move on to the onions: trim off the two ends and peel them, slice them not too thin to avoid burning during cooking
Add them to the potatoes, season with EVO oil, and mix well
Transfer everything to a baking pan or the fryer tray
Cook at 356°F for 15 minutes
Stir them a couple of times during cooking
While the potatoes and onions are cooking, take a bowl and beat the eggs with a whisk or fork, also add the small cup of milk, salt, and pepper
Grate the salted ricotta or the cheese you chose to use, chop the mint leaves, I used 6, mix and add the potatoes and onions. Combine everything
Grease the baking pan you decided to use for cooking the frittata with some oil. Pour the mixture and level it well
Spray some oil onto the surface
Insert the baking pan onto the fryer rack and cook at 356°F for 18 minutes. With my fryer, the bake program has a 2/3-minute preheating; it’s not necessary to preheat it if your fryer doesn’t, it might just take a few more minutes for cooking
Here’s the frittata ready. Check the cooking of the base, if it’s not golden enough, you can flip it with the help of a plate, reinserting it into the pan and continue cooking for a few minutes until you achieve the desired golden color
Cut and serve the Potato and Tropea Onion Frittata in Air Fryer hot or warm 😋😋

Cooking Tips for Potato and Tropea Onion Frittata Alternative to Air Fryer
If you don’t have an air fryer, it’s possible to cook the Potato and Tropea Onion Frittata in the oven, but the result is not the same as air fryer cooking. As an alternative to the fryer, I recommend opting for the classic frying pan cooking with oil, less healthy, but definitely tastier and not rubbery.
