Potato Panzerotti Filled in Air Fryer

Stuffed potato panzerotti are an excellent and tasty alternative to use potatoes. The recipe includes a potato dough with a cheesy filling. They are suitable for an appetizer, a buffet, but can also be enjoyed as an appetizer or main course.

Potato panzerotti are also easy and quick to prepare and do not require any resting time, just the time to let the potatoes cool down a bit before kneading them, so once ready you can proceed with cooking. You can vary the filling with whatever you prefer, with mushrooms or spinach, with speck or ham and mozzarella, with grilled vegetables and much more. I filled them with cooked ham and sweet provola slices.

Another positive note of these potato panzerotti is that they are not fried!! A definitely lighter and no less tasty version, which involves cooking in the oven or in an air fryer, a cooking method I prefer for many of my recipes, brushing the surface with a little oil will not make you notice the difference from classic frying.

You can cook the potatoes using the cooking method that is most convenient for you, I used the steam method in my multicooker / air fryer.

Ingredients for 10 potato panzerotti

  • 1 lb potatoes
  • 1 cup potato starch
  • 1 egg
  • 1 tsp instant yeast for savory preparations (about 3 g.)
  • 2 tsp extra virgin olive oil
  • to taste fine salt
  • to taste pepper
  • 3.5 oz cooked ham
  • A few slices sweet provola

  • 1 Air Fryer
  • 1 Pastry ring

Steps

How to prepare potato panzerotti

  • Wash, peel, cut the potatoes into chunks and cook them

  • Transfer them to a bowl and mash them with a fork or potato masher. Let them cool a bit and add the starch, yeast, salt, pepper, egg and knead.

  • Finally, add the oil and knead again until the dough has completely absorbed it

  • Between 2 sheets of parchment paper dusted with starch, roll out the dough to about 1/4 inch.

  • Cut the dough into 4-inch disks with a pastry ring, you can also use a glass.

  • Place a piece of ham and cheese on the disk.

  • Fold in half and press the edges well

  • Brush both sides with a little oil

  • Transfer the tray to the fryer and start the program at 400°F for 8 minutes, if lower to 350°F and continue for 4 minutes. Turn them over for better browning and continue cooking for another 4 minutes

To better enjoy the filled potato panzerotti, I recommend letting them cool slightly

You can prepare the potato panzerotti dough the day before and cook them later.

If you have leftovers already cooked, you can store them in the refrigerator and reheat them, either in the air fryer or in the oven
