Potato, Pesto, and Pecorino Mini Pies in Air Fryer are a delicious, single-serving appetizer perfect for any occasion. Potatoes are always delicious and suitable for many preparations.   • 1.1 lbs potatoes
  • 0.5 cup milk
  • 1.41 tbsp butter
  • 1.41 tbsp Grated Grana Padano
  • to taste nutmeg

  • 2.47 oz Genoese pesto
  • 0.7 oz Sardinian pecorino (cut into cubes)

Steps

How to prepare Potato, Pesto, and Pecorino Mini Pies in Air Fryer

  • First, prepare the mashed potatoes by boiling the potatoes, after peeling and cutting them into chunks. I steamed them in my air fryer which is also a multicooker https://www.amazon.it/dp/B09K255389?tag=gz-blog-21&linkCode=osi&th=1&psc=1&ascsubtag=0-f-n-av_amichefriggyenonsolo

  • Once ready, transfer them to a bowl, mashing them while hot with a fork.

  • Pour the milk into a pot, add the mashed potatoes, salt, pepper, and a generous grating of nutmeg, and cook the mashed potatoes until they have absorbed all the milk, stirring with a whisk.

  • Add the butter and grated Grana Padano and mix well

  • Let it cool for a few minutes

  • Once cold, add the egg to the mash and mix

  • Take the 5 molds, lightly grease them with some oil and coat them with breadcrumbs

  • With a spoon, distribute, for each mold, a portion of mashed potatoes, an abundant teaspoon of pesto, and a couple of cubes of pecorino

  • Cover with the remaining mashed potatoes and level the surface using the back of a spoon.

  • Cook the mini pies, placing the molds on your fryer’s grill, at 340°F for 15 minutes or until the surface is golden.

  • Check them during cooking, some mini pies were ready after 10/12 minutes
