The Pumpkin Medallions in Air Fryer are a tantalizing appetizer, very easy and quick to prepare. Just slice the Pumpkin, season it with an oil mixture, combine it with gorgonzola with mascarpone and walnuts and you’re done.
To prepare the pumpkin medallions I used the Butternut pumpkin variety, known as Zucca Violina, which lends itself very well to this recipe due to its shape. The Violina pumpkin is also suitable for the preparation of gnocchi, creams, risottos and can be consumed baked or combined with other ingredients, as in the recipe for Pumpkin and Sausage Pasta in Air Fryer, a very tasty first course. You can also use other varieties like Delica or Mantovana.

Ingredients
- 5 slices violina pumpkin
- 2 tbsp extra virgin olive oil
- 1 sprig rosemary (chopped)
- to taste salt and pepper
- 3 oz gorgonzola and mascarpone
- 5 walnut kernels

Steps
First, slice the Pumpkin to a thickness of about 3/4 inch and remove the skin
Chop the rosemary with a knife
In a bowl, prepare a mixture of extra virgin olive oil, with salt, pepper, and the chopped rosemary
Brush both sides and place the medallions on the air fryer tray or grill
Cook at 356°F for 15 minutes, until the pumpkin becomes soft, but should not fall apart
Place the gorgonzola with mascarpone and a walnut kernel on top of each slice. The pumpkin medallions are ready to be enjoyed
