Pumpkin with Bacon in Air Fryer

Pumpkin with Bacon in Air Fryer is an easy and quick side dish to prepare, and you only need 2 ingredients: pumpkin and bacon. The sweet taste and soft texture of the pumpkin, in contrast with the bold and crispy bacon, will surprise you. This recipe is also suitable if you want to impress your guests with a different appetizer than usual.

For the Pumpkin with Bacon recipe, I used butternut squash, which you can also replace with kabocha or mantovana squash and sliced bacon. Ingredients

  • 10 oz butternut squash (or kabocha, peeled)
  • 4 oz bacon (sliced) (in slices)

Steps

  • Cut the pumpkin into slices about 1/4 inch thick, remove the seeds and skin. Lightly salt the pumpkin slices, they will absorb the saltiness of the bacon during cooking.

  • Wrap each pumpkin slice with 1 slice of bacon (if you use a larger pumpkin, you will need 2 slices of bacon for each pumpkin slice) and place it in a tray or directly on the air fryer grill.

  • Cook at 320°F for 14 minutes and at 390°F for 1 minute to give more crispiness to the bacon. I started at a low temperature to give it time to soften without overcooking it, risking it falling apart.

  • The pumpkin with bacon is ready

  • Serve it and enjoy it hot
