Rice and Spinach Balls in Air Fryer

The Rice and Spinach Balls in Air Fryer are a simple and very 😋 dish, a recipe you can also prepare with leftovers, as I did. I had some spinach to use up that I had bought to make my recipe for the Stuffed Picanha in Air Fryer, so I decided to prepare the rice and make some balls. For the Rice and Spinach Balls recipe, I cooked the spinach in a pan with olive oil and garlic, prepared a classic risotto by creaming it with butter and Grana Padano, and once cooled, I added an egg. To make the balls gooey and tasty, I put in the center the sweet Sardo, a fresh soft cheese you can easily replace with mozzarella or whatever you prefer or have available. Shall we prepare them?

  • 8.8 oz spinach (fresh)
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste salt
  • 1/3 cup Grana Padano grated
  • 10.5 oz Carnaroli rice
  • Half yellow onion
  • 2 tbsp butter
  • 1 tbsp Grana Padano grated
  • 1 qt vegetable broth
  • to taste extra virgin olive oil
  • 2 tbsp white wine
  • 1 egg
  • to taste breadcrumbs
  • 2.1 oz soft table cheese (sweet Sardo)
  • A few sprays oil

Steps

How to prepare Rice and Spinach Balls in Air Fryer

  • In a large pan, sauté the garlic clove with a drizzle of oil,

  • Add the spinach after washing and drying them and let them cook covered over medium heat, stirring occasionally for about ten minutes

  • Let them cool and transfer them to a jug and blend them with the hand blender adding 1/3 cup of Grana Padano, a pinch of salt, and set them aside

  • After cleaning the onion, sauté it in a pan with a bit of olive oil or, if you prefer, with a knob of butter

  • Once the onion is well softened, add the rice and toast it, stirring with a spoon

  • Deglaze with the white wine and let it evaporate completely. Continue cooking the rice by gradually adding the hot broth, stirring often

  • Towards the end of cooking, add the spinach to the rice and complete the cooking

  • Cream it with butter and with a tablespoon of Grana Padano and let it cool

  • Add the egg and leave it in the refrigerator for an hour to firm up well

  • After cutting the cheese into cubes, take some rice and insert a piece of cheese in the center

  • Take more rice, closing and shaping the ball

  • Pour some breadcrumbs into a bowl or on a plate and completely cover the balls, trying to compact them as much as possible

  • Repeat in sequence until all ingredients are used up

  • Transfer the balls onto the air fryer grill and give them a few sprays of oil

  • Cook them at 392°F for 12 minutes, raise to 428°F and continue for 2 minutes. If your fryer goes up to 392°F max, continue at this temperature until the desired golden-brown.

  • They are delicious!!
