These Ricotta Balls with seeds are a perfect finger food for a buffet, a party, or as an appetizer and starter for a lunch or dinner with friends. Light, tasty, they do not contain eggs and are covered with seeds, in this case sesame and poppy seeds, but you can use only those you have available or prefer. They are prepared with a mixture of ricotta and cheese, enriched with pitted black olives and sun-dried tomatoes, a mix of delicacy and taste at the same time.

Ingredients
- 8.8 oz cow's milk ricotta
- 4.2 oz pitted olives (black sliced)
- 6 sun-dried tomatoes in oil
- 0.9 oz breadcrumbs
- 2 tbsps Grana Padano cheese
- 1 bunch chopped parsley (fresh or frozen)
- 1.1 oz sesame seeds
- 0.5 oz poppy seeds
- A few sprays vegetable oil
- to taste salt and pepper

Steps
Start by chopping the parsley, slicing the olives and cutting the sun-dried tomatoes into pieces. Put everything in a bowl
Add the breadcrumbs, grated Grana Padano cheese, salt, and pepper
Add the ricotta and mix well
With slightly damp hands, form the balls by taking a bit of the mixture. Roll them in the small bowls you have prepared with the two types of seeds. These are with sesame seeds

As you prepare the balls, place them on a tray or baking sheet. Once done, spray with a bit of oil, either extra virgin or vegetable
Cook at 356°F for 10 minutes, then continue by raising the temperature to 392°F for 2 minutes
