Rustic Cookies in Air Fryer

These Rustic Cookies in Air Fryer are super good. The crumbly pastry encases a delicious filling of toasted walnuts and pine nuts, combined with a teaspoon of honey to raisins and chocolate. They are perfect as sweet treats at the end of a meal and ideal for the upcoming holidays. For the Rustic Cookies in Air Fryer, a double rest in the fridge is required, the first for the pastry and the second for the filled roll. If you don’t have much time available, you can prepare the pastry the day before, keeping it wrapped in plastic wrap, always in the fridge. The butter should be at room temperature, so I recommend taking it out of the fridge 20 minutes before preparing the shortcrust pastry.

Ingredients

Ingredients for 13 rustic cookies

  • 1 1/2 cups all-purpose flour
  • 1 egg
  • 1/4 cup butter
  • 1/4 cup granulated sugar
  • 1 pinch salt
  • 1 teaspoon baking powder (coffee spoon)
  • Half edible lemon zest (grated)
  • 1/3 cup walnut halves
  • 2 tablespoons pine nuts
  • 1/4 cup sultana raisins
  • 1/4 cup dark chocolate (or chocolate chips)
  • 1 teaspoon multi-flower honey (or acacia)

  • 1 Baking tray for walnuts and pine nuts

Steps

How to prepare Rustic Cookies in Air Fryer

  • For the preparation of the shortcrust pastry, follow the steps of the Crispy Tart with Creamy Nutella recipe until the rest in the refrigerator

  • Put the pine nuts and walnut halves in a baking tray and toast them at 465°F for 4 minutes, shaking a couple of times. If your air fryer reaches 392°F, it might take a few more minutes, check the cooking. Meanwhile, rehydrate the raisins in a bowl with lukewarm water for about 10 minutes

  • Once ready, transfer them to a cutting board and roughly chop them with a knife

  • Do the same for the chocolate if you used a bar, do nothing if you have chocolate chips

  • Combine the walnuts, pine nuts, and chocolate. Add the raisins, after squeezing them well, and the teaspoon of honey. Mix everything together

  • After resting the pastry, roll it out between two lightly floured parchment papers, trying to give it a rectangular shape

  • Now insert the filling, leaving some space at the edges

  • Use the parchment paper to close the roll, sealing the edges and ends

  • Tighten with the parchment paper to form a roll, wrap it, and let it rest in the fridge for half an hour

  • After resting, you can remove the parchment paper and cut the roll into slices of about 3/4 inch

  • Transfer them onto the grid or tray of your air fryer

  • Bake at 340°F for 15 minutes or until the cookies are golden

  • Let them cool, and if you like, you can sprinkle them with powdered sugar

If you have leftovers… you can store them for 3 days in an airtight container
