- 14 oz butternut or delica pumpkin
- 10 oz potatoes
- 2 Tropea red onions
- 1 roll puff pastry (round)
- 4 oz provola cheese
- 1.8 oz spicy provolone cheese
- 2 tbsps Pecorino Romano cheese (grated)
- as needed breadcrumbs
- as needed extra virgin olive oil
- as needed salt and pepper
- as needed marjoram (dried)

- 1 Air Fryer
- 1 Non-stick baking pan
- 1 Tart pan
- 1 Knife
- 1 Fork
- 1 Grater
Steps
How to prepare the Savory Pie with Pumpkin, Potatoes, and Tropea Onions
Start with the vegetables: peel and cut the pumpkin into cubes, do the same with the potatoes after washing and drying them. Peel the Tropea onions and slice them not too thinly
Transfer everything to a non-stick baking pan, add a drizzle of EVO oil, salt, pepper, marjoram, and mix well with a spoon or wooden spatula
Place the pan in the air fryer and cook with the air fry setting at 356°F for 20 minutes. Stir or shake the vegetables a couple of times during cooking
Once the vegetables are ready, take them out
Add the grated provolone cheese
Also add 3.5 oz of diced provola cheese and mix well. Adjust salt and pepper if necessary, but don’t overdo it. The provolone is already very flavorful and the Pecorino Romano will add even more taste to the vegetables
Take the tart pan and place the puff pastry in it, removing the parchment paper. Prick the base with a fork
Distribute the vegetables and sprinkle with Pecorino and a light layer of breadcrumbs
Fold the edges of the pie and drizzle with a bit of oil
Preheat the air fryer with the bake or air fry setting at 338°F for 2/3 minutes. Place the pan on the grill or tray and cook the pie for 23 minutes.
Remove the pan and check the base’s cooking; if necessary, continue for a few more minutes. If sufficiently cooked, distribute the remaining diced provola cheese on top
Put the pan back in the air fryer and continue cooking at 392°F for 2 minutes or until the provola melts
Remove it from the oven and wait a few minutes before serving
Transfer the Savory Pie with Pumpkin, Potatoes, and Tropea Onions to a serving platter, cut it into wedges and serve it
