Ingredients
- 1 red bell pepper
- 2 dark zucchini
- 2 Tropea onions
- 1 package stracchino
- 1 rectangular puff pastry
- 2 tablespoons extra virgin olive oil
- to taste salt
- to taste pepper
- 2 tablespoons grated Grana Padano
Tools
- 1 Air Fryer
- 2 Non-stick baking trays
- 1 Knife
- 1 Wooden spoon
Steps
Wash and dry the zucchini and the bell pepper. Cut off the top of the bell pepper and remove the seeds inside, rinse under running water, dry with paper towels, and cut into strips. After cleaning the onions, cut them into slices not too thin. Trim the ends of the zucchini and cut them into chunks.
Transfer them to the baking tray and season with extra virgin olive oil, salt, pepper, and grated Grana Padano. Mix with a wooden spoon or silicone spatula and cook at 410°F (210°C) for 15 minutes, stirring a couple of times. Once ready, set them aside
Unroll the rectangular puff pastry and transfer it to a baking tray with high edges. Prick it with the prongs of a fork, cover it with parchment paper and dried beans for blind baking. Insert the tray in the air fryer and bake at 340°F (170°C) for the first 10 minutes, then at 355°F (180°C) for another 10 minutes, until the edges are colored.
Remove the beans and parchment paper, add the mixed vegetables with another 2 tablespoons of Grana, and scatter the stracchino over the vegetables. Return the tray and start cooking at 355°F (180°C) for 10 minutes, just enough time to melt the cheese
