How delicious this savory plumcake cooked in the air fryer is! Crunchy on the outside and soft on the inside, it all mixes together and cooks and is ready in half an hour. The filling of the savory plumcake can be varied with other cold cuts and cheeses, or you can add some mushrooms or artichokes in oil cut thinly or everything you have in the fridge, maybe to be consumed.. Here this can be a classic “fridge cleaning” recipe, vegetables such as zucchini or grilled eggplants cut into pieces are also perfect.
The plumcake is perfect as a main course for a quick lunch, but also for a buffet or an aperitif. I decorated the plumcake with sesame seeds (which I love) that you can replace with poppy seeds or pumpkin seeds, or, if you prefer, you can leave it undecorated and simple. Once again for the cooking of the savory plumcake I used my beloved kitchen ally.. the air fryer. Nothing prevents you from cooking it in your classic oven, in that case, you will need to preheat it to bring it up to temperature. The plumcake pan I used is non-stick and measures 9 x 4 inches, you can replace it with a disposable aluminum one or if you don’t have the pan use a 8-inch cake pan or muffins!! But… let’s prepare it…

Ingredients
Ingredients for a 9 x 4 inch pan
- 1 2/3 cups all-purpose flour
- 1/3 cup vegetable oil
- 1/3 cup milk
- 2 eggs
- to taste salt and pepper
- to taste breadcrumbs (to dust the pan)
- to taste butter (to butter the pan)
- 1 packet instant yeast for savory preparations
- 1.7 oz Milano salami (sliced)
- 2.5 oz cooked ham (sliced)
- 3.2 oz latteria cheese (or fontal)
- 60 pitted olives
- 3.5 oz Grana Padano grated cheese
- to taste sesame seeds

Steps
First, prepare in a bowl all the ingredients for the filling, cheese cut into pieces, ham and salami shredded, olives, etc. I used sliced cooked ham and salami, but you can also use them diced.
In another large bowl, beat the eggs with oil and milk and add the salt and pepper.
Add sifted flour and yeast, grated Grana Padano. Mix well with a spatula or spoon and integrate the filling ingredients. Mix well and pour into the plumcake pan, previously buttered and dusted with breadcrumbs. Add sesame seeds to decorate
Air Fry Mode, Bake program 350°F for 30 minutes.
Your savory plumcake cooked in the air fryer is ready. Let it cool slightly before cutting and serving it… it’s also good at room temperature
For oven cooking, preheat and cook at 350°F for 30 minutes, always doing the toothpick test. The savory plumcake can be stored in the refrigerator for a couple of days
