The Savory Potato, Broccoli, and Sausage Pie in Air Fryer is a rich and flavorful one-dish meal, perfect for dinner or to bring to the office for a lunch break.
This combination of ingredients makes this savory pie a true comfort food: the potatoes make the filling soft, the broccoli adds color, the sausage gives it that rustic and flavorful touch, and the cheeses do the rest, a dish that wins everyone over at the first bite.
It’s very easy to prepare, and the air fryer cooking ensures a golden and fragrant savory pie: cook the potatoes and broccoli, then sauté with the sausage in a pan, add the cheeses, in this case, parmesan, diced sharp provolone, and to complete, a few slices of smoked cheese. Then, roll out the pastry in the mold, pour in the filling, and cook in the air fryer until the surface is golden and the cheese is melted. The result is a high savory pie, soft inside, and crispy outside.
Savory pies are also perfect for a buffet and an aperitif and can be filled with whatever we like and prefer. I love the version with Vegetables and Soft Cheese. Every time I make it, it always gets a lot of success. Or another alternative in a more autumnal version is the one with Pumpkin and Potatoes.

Ingredients
Ingredients for a round pastry
- 7 oz potatoes
- 10.5 oz broccoli
- 7 oz sausage
- 1 clove garlic
- 1 fresh chili pepper (or dried)
- 1 oz grated Parmesan cheese (or Grana Padano)
- 1.5 oz sharp provolone cheese
- 3 slices smoked cheese
- 1 tsp anchovy paste
- 1 roll puff pastry (round)
- to taste salt and pepper

Steps
Preparation of the Savory Potato, Broccoli, and Sausage Pie in Air Fryer
Steam Cooking (I) in Ninja Multicooker 12 in 1: fill the combi tray with 1 liter of water. After thoroughly washing the broccoli and removing hard stems and leaves, place them on the rack. Peel the potatoes, cube them, and add them to the broccoli
Cooking in a Pot: bring salted water to a boil, add the broccoli, and boil until soft, the same for the potatoes
While the potatoes and broccoli are cooking, prepare the sausage by removing the casing and set aside
Set the switch to combi cooker mode (left) and set the steam program for 15 minutes (test the broccoli by piercing with a fork, they should be soft). Drain them when cooking is finished
In a pan, sauté a garlic clove and chili pepper with a drizzle of olive oil, and melt the anchovy paste. If using fillets, remove from heat, wait a minute, and add the anchovies. Return the pan to heat, keeping the flame low to avoid burning. The anchovies should melt slowly
Add the broccoli and let it flavor while stirring
Add the crumbled sausage and brown until golden.
Finally, add the potatoes, stir and let everything flavor for a few minutes
Remove the pan from heat, let it cool, and complete the filling by adding diced cheese, grated Parmesan, salt, and pepper. Stir
Now assemble the pie: line the mold with the puff pastry, removing the parchment paper. Prick the bottom with a fork.
Pour the filling, level the surface, and fold the edges of the pastry inward.
Preheat the air fryer to 340°F for 2/3 minutes, use the bake setting if available or air fry. Insert the mold and cook at 340°F for 20–25 minutes
Remove the pie and place the slices of smoked cheese on top
Return to the air fryer to cook at 375°F for 2/3 minutes, or until the cheese is melted, the surface is golden, and the pastry is crispy (Times may vary depending on your air fryer model)
Let it cool for 10 minutes before cutting: the pie will be more compact and easier to serve.

Storage, Tips, and Variations
The savory pie can be stored in the refrigerator for 2/3 days well covered.
It can be frozen after cooking, and once thawed, you can reheat it in the air fryer for 8–10 minutes at 320°F
For a vegetarian version of the savory pie, omit or replace the sausage with sautéed mushrooms.

Preheat the oven to 355°F/375°F and bake for about 30 minutes
