Perfectly cooked, soft potatoes that can be smashed effortlessly while remaining intact… fantastic, right?

  • 5 potatoes
  • 5.3 oz Gorgonzola (sweet)
  • to taste extra virgin olive oil
  • to taste chives (dried or fresh)
  • to taste salt and pepper

Steps

Preparation of Smashed Potatoes with Gorgonzola in Air Fryer

  • Thoroughly wash the potatoes, removing any dirt residue. Dry them and place them on the fryer rack

  • Cook them for about 25 minutes. Cooking times may vary depending on the size of the potatoes

  • Test with a skewer or fork prongs; if there is no resistance, they are ready. Let them cool for a few minutes

  • Grease the tray or baking dish and distribute the potatoes.

  • With the bottom of a glass, gently smash them, creating small irregular disks: these cracks will become crispy.

  • Brush each potato with a drizzle of oil, add salt, pepper, and chives

  • Put them back in the air fryer and cook at 392°F for 12 minutes, until they are crispy and golden.

  • Remove the tray and add a piece of gorgonzola on each potato and cook for another 2 minutes, still at 392°F, just enough time to melt it.

  • I used spoonable gorgonzola, you can use the sliced kind and cut it into cubes, it will melt creating a delicious cream.

  • Serve immediately to enjoy the maximum creaminess🤤

Oven Cooking of Smashed Potatoes with Gorgonzola

Unlike the air fryer, you will need to boil the potatoes, which will take about 30/35 minutes. Once ready, drain them well and let them cool. Place the potatoes on a baking sheet with parchment paper and proceed as for the air fryer. Preheat the oven to 392°F and bake for 15/20 minutes until the surface is golden, add the gorgonzola on top of each potato, and continue cooking for a few more minutes, just enough time to melt it.

Tips and Storage

Use potatoes of the same size, preferably medium-small, for even cooking.
Sweet gorgonzola makes the recipe milder; spicy gorgonzola adds character

Store them in the refrigerator for a couple of days in an airtight container. You can reheat them in the air fryer for a few minutes. With melted cheese, it is better to consume them immediately.

Variations

If you don’t like gorgonzola and want a stronger flavor, replace it with smoked scamorza.
You can enrich them with crispy bacon, adding the already browned cubes before the last minute of cooking.
