Stewed Red Mullets in Air Fryer

With this Stewed Red Mullets recipe, I show you how to cook fish with a delicious sauce in an air fryer, without odors and without dirtying pans and stoves. The recipe is very simple and fast; after cleaning the fish, all that remains is to place it in a baking dish with the rest of the ingredients and start cooking right away for just a few minutes… it’s easier done than said! The mullets will remain soft and succulent, and mopping up the sauce is a must 😁

There are two types of mullets, mud and rock mullets. I used the latter, although I prefer the mud mullet for its more distinct flavor. Mullet is a lean fish, nutritious and highly digestible. I recommend buying them very fresh and consuming them as soon as possible to maintain the flavor and firm flesh during cooking.

Ingredients

Ingredients for 3 red mullets

  • 3 red mullets (rock or mud)
  • 6 oz Piccadilly tomatoes (or cherry tomatoes)
  • 1 oz salted capers
  • 2 cloves garlic
  • 3.5 tbsp white wine
  • as needed extra virgin olive oil
  • 1 bunch parsley (plus 2 stems)
  • as needed salt and pepper

Steps

  • First, clean the fish. If your trusted fishmonger has already cleaned it, you only need to remove the fins, scale it with a knife, and rinse it well under running water to remove any traces of blood. If you bought it uncleaned, you will need to gut it by cutting the belly with scissors and remove the innards. Remove the fins, also with scissors, those on the belly and sides. With a knife, remove the scales starting from the tail towards the head. Rinse well under running water.

  • Dry well with paper towels and lay the red mullets in a non-stick baking tray.

  • Add the chopped parsley, coarsely chopped capers previously desalinated, and the parsley stems.

  • Add the halved garlic cloves, remove the germ, the tomatoes cut into 2 or 4 parts depending on size, the wine, salt and pepper to taste, and a drizzle of extra virgin olive oil.

  • Place the tray on the air fryer rack and cook at 356°F (180°C) for 12/13 minutes.

  • Check a couple of times during cooking and baste the surface of the red mullets with a spoon.
